Yield Makes about 5 cups, serving 6

Number Of Ingredients 6

2 avocados (preferable California)
2 tablespoons fresh lemon juice
1/2 cup sour cream
3 to 3 1/2 cups chicken broth
1/4 teaspoon Tabasco
2 ounces smoked salmon

Steps:

  • Peel and pit the avocados and in a blender blend them with the lemon juice, the sour cream, 3 cups of the broth, and the Tabasco until the mixture is smooth, adding enough of the remaining 1/2 cup broth to thin the mixture to the desired consistency. Transfer the soup to a bowl, season it with salt and pepper, and chill it, its surface covered with plastic wrap, for 1 hour, or until it is cold. (The soup will discolor if kept for more than 6 hours.) Stir half the salmon, chopped, into the soup, divide the soup among chilled bowls, and garnish it with the remaining salmon, cut into strips.

Overall, I thought this soup was just okay. It wasn't bad, but it wasn't anything special either.

This soup is a bit pricey to make, especially if you use high-quality ingredients.

I followed the recipe exactly, but my soup didn't turn out as creamy as I expected. I'm not sure what I did wrong.

This soup was a bit too thick for my liking. I would recommend adding more liquid, such as milk or broth.

I found this soup to be a bit too salty for my taste. I would recommend using less salt than the recipe calls for.

I'm not a huge fan of avocado, but I really enjoyed this soup. The avocado flavor is very subtle.

This soup was a delightful surprise! The combination of avocado and smoked salmon is unexpected, but it works incredibly well together. The soup is creamy and flavorful, with a lovely smoky undertone.
