Time 35m

Yield 48 pieces

Number Of Ingredients 5

1/2 cup brown sugar
2 tablespoons paprika
1/2 teaspoon cayenne pepper
One 16-ounce package bacon
One 13-ounce package cocktail franks, such as Lit'l Smokies

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, combine the brown sugar, paprika and cayenne pepper and mix well. Set aside.
  • Slice the bacon strips into thirds. Wrap each frank with a piece of bacon, secure with a toothpick and place on a baking sheet. Repeat with the remaining franks and bacon. Thoroughly coat each bacon-wrapped frank in the brown sugar mixture and place back on the baking sheet.
  • Bake until the bacon is crispy, 12 to 15 minutes. The rub has a lot of sugar in it, so make sure to turn halfway through the cooking process so the bottoms do not burn.

I'm not a big fan of smokies, but I really enjoyed these bacon-wrapped smokies. The bacon adds a lot of flavor.

These were a bit too salty for my taste, but I think that's because I used a smoked sausage. Next time I'll use a regular sausage.
