Baked Corn Casserole image

Many variations can be used with this recipe. Adding ingredients like cheese, ham, green onions, diced jalapenos, etc. are easily done.

1 box Jiffy corn muffin mix
1 can(s) whole kernel corn, drained
1 can(s) cream style corn
1 c sour cream
1/2 stick butter, softened
1 egg

Steps:

  • 1. Preheat the oven to 350 degrees. Butter a 2-quart casserole dish or spray with nonstick cooking spray. In a large bowl, combine all the ingredients. Mix well. Pour into the casserole dish. Cover and bake for 30 minutes. Uncover and bake for 30 to 35 more minutes, or until set and the top is golden.
