BAKED EGGS WITH CHEDDAR AND BACON image

This tasty dish is a wonderful way to make eggs for one or two or even for company. Can also be a light dinner meal. Very versatile as well as yummy! Recipe & photo: tasteofhome.com

4 eggs
4 Tbsp milk, divided
2 Tbsp shredded smoked cheddar cheese (i would double the cheese and you can use any cheese you like)
2 tsp minced fresh parsley
1/4 tsp salt
1/8 tsp pepper
2 slice bacon

Steps:

  • 1. Coat four 4-oz. ramekins with cooking spray; break an egg into each dish. Spoon 1 Tbsp. milk over each egg. Combine the cheddar cheese, parsley, salt and pepper; sprinkle over tops.
  • 2. Bake, uncovered, in a preheated 325-degree oven for 12-15 minutes or until whites are completely set and yolks begin to thicken but are not firm.
  • 3. Meanwhile, in a small skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain. Crumble bacon and sprinkle over eggs. Serve while hot.
