I'm not a big fan of sweet potatoes, but I thought I would give this recipe a try. I was pleasantly surprised! The sweet potatoes were cooked perfectly and the cinnamon sugar topping was delicious.

These were a bit too sweet for my taste. I think I would reduce the amount of sugar in the topping next time.

These were so easy to make and they turned out great! I used a mandoline to slice the potatoes and they cooked evenly. The cinnamon sugar topping was the perfect finishing touch.
