Categories     Onion     Side     Bake     Quick & Easy

Yield 4 servings

Number Of Ingredients 4

4 large Vidalia onions
4 beef bouillon cubes
4 tablespoons butter
Freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F. Trim and slice from the top of each onion, and peel the onion without cutting off the root end. Using a potato peeler, cut a small cone shaped section for the center of the onion. Cut the onion into quarters bron the top down, stopping within 1/2-inch of the root end. Place a bouillon cube in the center of each onion, slip silvers of butter between the sections, and sprinkle with pepper. Wrap each onion in heavy duty foil and place onions in a 13x9x2-inch baking dish. Bake onions for 45 minutes. To serve, place each onion in individual bowls, because the onions will produce a lot of broth. Tastes like French onion soup.

I've made this recipe several times and it's always a hit. The onions are always so sweet and tender. I like to add a little bit of chopped parsley to the mix for extra flavor.

I was disappointed with this recipe. The onions didn't caramelize as much as I expected and they were a bit bland. I won't be making this again.

These onions were a bit too sweet for my taste. I think I'll try using less brown sugar next time.
