- 1. Preheat over to 350 degrees F. Butter a loaf pan. In a medium glass bowl, combine fruit and oats and toss. Set aside. In the bowl of your stand mixer, beat sugars, egg, and oil until smooth. Add the fruit and beat on low speed until everything is well incorporated. Add the flour a ¼ cup at a time. Pour batter into the loaf pan and bake for about 30-40 minutes or until golden brown and the cake tester comes clean. Leave the loaf in the pan to cool on a wire rack. In a small bowl, whisk ingredients for cinnamon icing. Drizzle over cooled loaf and let set for about 10 minutes. Serve with a cup of coffee or tea.
