Banana Chicken Salad image

This may sound crazy, but it is good! Just serve it on a lettuce leaf - can also use left-over turkey.

3 c cut-up cooked chicken (or turkey)
1-15oz can(s) Red Kidney Beans, rinsed & drained
1 c Pineapple Chunks
3 bananas, small, sliced
Lettuce leaves
1/4 c Fresh Lemon Juice
1/4 c Olive Oil
2 Tbsp Chopped Canned Green Chilies
1 Tbsp Chopped Pimento
2 Tbsp Chopped Parsley
3/4 tsp Salt
1/4 tsp Dry Mustard

Steps:

  • 1. In large bowl combine chicken, Kidney beans, pineapple and sliced bananas. Toss with Green Chili Dressing. Serve on Lettuce leaves.
  • 2. GREEN CHILI DRESSING: Mix lemon juice and next 6 ingredients in small bowl. Let stand 1 hour or longer for flavors to blend.
