This relish was just okay in my opinion. It wasn't bad, but it didn't wow me either. The flavors were a bit muted and lacked the brightness I was hoping for. I think I'll stick to my usual relish recipe next time.

I found this recipe to be more work than it's worth. The chopping and dicing of all the vegetables took a long time, and the cooking process was also quite lengthy. I think there are easier and quicker ways to make a delicious relish.

While the flavors in this relish were good, I found it to be a bit bland. I would have liked a bit more spice or heat to give it some extra kick. I think adding some chopped jalapeƱos or cayenne pepper would do the trick.
