I was inspired by a dish served at M Cafe in Los Angeles, which is known for its healthy and delicious menu choices. Its best served cold as a delicious side dish or summer salad.

This salad is a great way to use up leftover quinoa. I always have some quinoa on hand, so it's nice to have a recipe that I can use it in.

I'm not usually a fan of beets, but this salad changed my mind! The beets are roasted until they're caramelized and sweet, and the lemon vinaigrette perfectly balances out the earthy flavor of the beets.
