- 1. To make the brownie mix: In a large bowl, sift together flour, baking powder and salt. Add in sugar and cocoa. Blend well, until evenly distributed. Place mix in an air tight container and store in a cool, dry place. This mix will keep for a long time!
- 2. For the brownies: Preheat the oven to 350 degrees. Spray an 8x8 pan with cooking spray.
- 3. In a medium bowl, combine 2 1/2 cups brownie mix with oil, eggs, vanilla and water and wisk together with a fork until dry ingredients are moistened.
- 4. Pour into a square pan and spread evenly. Bake at 350 for 25 minutes or until done in the center. Double the brownie recipe for a 9x13 pan and bake for 28-30 minutes.
