Provided by kayjayjohnson

Number Of Ingredients 4

3 (14-ounce) cans coconut milk
4 cups sweet rice
2 cups brown sugar, lightly packed
1 cup coconut cream

Steps:

  • Pour coconut milk and about a cup of water into a pot and let it come to a simmer over medium heat. When simmering, add in the rice and stir constantly to prevent burning. Lower the heat if necessary. Preheat oven to 350°F. When rice is fully cooked, sticky and almost dry (it will look like sticky risotto), about 10 to 15 minutes, add 1 cup brown sugar. (Note: If rice is already sticky but not yet fully cooked, add small amounts of water, stir and continue cooking. Rice must be fully cooked before it goes into the oven.) Stir well and take off heat. Pour into a lightly buttered 9×13-inch pan and smooth the top. Mix the remaining 1 cup brown sugar and coconut cream until smooth and pour it over the rice. Bake for about 1 hour or up to 1 1/2 hours, until topping is dark brown and has thickened. Cool slightly before serving.

I'm a vegan, so I made this biko with coconut oil instead of butter. It turned out delicious! The coconut oil added a nice richness to the biko.

I'm allergic to coconut, so I made this biko with almond milk instead. It turned out great! The almond milk gave the biko a nice nutty flavor.

I'm not sure what all the hype is about. This biko is just average. It's not bad, but it's not amazing either.

This biko is okay. It's not the best I've ever had, but it's still pretty good. I would have liked it more if it was a little less sweet.

I was disappointed with this recipe. The biko was too dry and lacked flavor. I won't be making this again.

This recipe is a fail. The biko came out too sticky and sweet. I followed the recipe exactly, so I'm not sure what went wrong.

I'm not a big fan of sticky rice, but this biko changed my mind. It's so flavorful and the texture is amazing. I'll definitely be making this again.

This biko is so good! It's the perfect dessert for any occasion. I especially love the way the coconut milk and brown sugar caramelize on top. Yum!

I've tried many biko recipes before, but this one is by far the best. The instructions are clear and concise, and the ingredients are easy to find. The biko came out perfect, with a chewy texture and a delicious coconut flavor.

This biko recipe is a keeper! It's so easy to follow and the results are amazing. The biko turned out perfectly sticky and sweet, with a beautiful golden brown crust. I'll definitely be making this again and again.
