Number Of Ingredients 9

2 pounds 2 pounds asparagus, trimmed
1/2 cup olive oil
1/3 cup Champagne vinegar
2 tablespoons minced fresh Tarragon, Basil or Dill
1 teaspoon Dijon mustard
1 clove small clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon fresh parsley

Steps:

  • Prepare Asparagus
  • Thicker asparagus works great for this method. If using, use a vegetable peeler to peel bottom third of asparagus spears. Cook asparagus in large pot of boiling salted water until just crisp-tender. Depending on the thickness of your asparagus this could be anywhere from 1-3 minutes. Drain; and immerse in ice water bath to cool quickly. Once cold, drain again. (Can be made 1 day ahead. Pat dry; wrap in paper towels, then plastic, and refrigerate.) Tarragon Dressing This is just a suggestion, any fresh herb variation will be good... I like tarragon or basil best.

I'm not a fan of tarragon, so I used a different herb in the dressing. It still turned out great!

This dish was a bit too time-consuming for me. I think there are easier ways to cook asparagus.

This recipe was a bit too bland for my taste. I think it needed more salt and pepper. The asparagus was also a bit overcooked.

I tried this recipe and it turned out great! The asparagus was tender and the dressing was flavorful. I added a bit of lemon zest to the dressing for an extra pop of brightness.
