Time 1h50m

Yield 1 quart

Number Of Ingredients 6

2 cups heavy cream
2 cups half-and-half
1/2 vanilla bean, split lengthwise
9 egg yolks
3/4 cup sugar
2 tablespoons green tea powder

Steps:

  • In a saucepan over medium heat, combine the cream, half-and-half, and vanilla bean, stirring occasionally to make sure the mixture doesn't scorch on the bottom. When the cream mixture reaches a fast simmer (do not let it boil), set aside to infuse for 10 to 15 minutes.
  • In a medium bowl, whisk together the egg yolks and sugar. Whisking constantly, slowly pour the still-hot cream mixture into the egg yolk mixture. Return the mixture to the saucepan and cook over medium heat, stirring constantly with a wooden spoon. At 160 degrees, the mixture will give off a puff of steam. When the mixture reaches 180 degrees it will be thickened and creamy, like eggnog. If you don't have a thermometer, test it by dipping a wooden spoon into the mixture. Run your finger down the back of the spoon. If the stripe remains clear, the mixture is ready; if the edges blur, the mixture is not quite thick enough yet. When it is ready, quickly remove it from the heat and whisk in the green tea. Meanwhile, half-fill a large bowl with ice water. Strain the mixture into a smaller bowl to smooth it and remove the vanilla bean. Rest the smaller bowl in the ice water and let the mixture cool, stirring often, then continue according to the directions of your ice cream maker.

Tips:

  • Use high-quality green tea. The better the tea, the better the ice cream will taste. Look for a green tea that is fresh, aromatic, and has a delicate flavor.
  • Steep the green tea properly. To get the most flavor out of the tea, steep it for the correct amount of time. For most green teas, this is 3-5 minutes. If you steep the tea for too long, it will become bitter.
  • Let the green tea cool completely. Before adding the tea to the ice cream base, let it cool completely. This will help to prevent the ice cream from becoming icy.
  • Use a good ice cream maker. If you don't have an ice cream maker, you can still make this ice cream, but it will take longer and the results won't be as good. If you do have an ice cream maker, make sure it's in good working order before you start.
  • Churn the ice cream according to the manufacturer's instructions. The churning time will vary depending on the type of ice cream maker you have. Be patient and churn the ice cream until it is thick and creamy.
  • Store the ice cream in the freezer for at least 4 hours before serving. This will give the ice cream time to firm up and develop its full flavor.

Conclusion:

Green tea ice cream is a delicious and refreshing treat that is perfect for any occasion. It's easy to make and can be customized to your liking. So next time you're looking for a sweet treat, give green tea ice cream a try. You won't be disappointed!
