1 cup shredded cheese (any variety. I love Colby-Monterey Jack blend)
1 10 3/4 oz can cream of chicken soup
1/2 cup sour cream
extra cheese for sprinkling on top (optional)

Steps:

  • Heat oven to 375°F. Spray an 8-inch square casserole dish with non-stick spray.
  • Mix all ingredients together in a large bowl, coating the ham and potatoes evenly.

6 small potatoes, peeled and cubed
3 tablespoons butter
2 cups cubed fully cooked ham
1 small onion, finely chopped
¼ cup butter
3 tablespoons all-purpose flour
1 ½ cups milk
salt and ground black pepper to taste
1 (8 ounce) package shredded Cheddar cheese
¼ cup bread crumbs

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 1 1/2-quart baking dish.

2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
2 cups sour cream
1/2 cup water
1/2 teaspoon pepper
2 packages (28 ounces each) frozen O'Brien potatoes
1 package (16 ounces) process cheese (Velveeta), cubed
2-1/2 cups cubed fully cooked ham

2 carrots
1 can Campbell's Cream of Mushroom Soup
1 can Campbell's condensed cream of celery soup
1 cup milk
salt & pepper
Velveeta cheese slices (optional)

Steps:

  • Peel and slice potatoes, carrots, and onion.
  • Mix ham cubes with vegetables.
  • spray 11x14 baking dish with Pam.
  • Put vegetables in dish.
