ASIAN GRILLED SALMON

Ina Garten's Asian Grilled Salmon, from Barefoot Contessa on Food Network, is a light, quick main dish with salty-sharp flavors like Dijon and soy sauce.

Provided by Ina Garten

Categories     main-dish

Time 34m

Yield 6 servings

Number Of Ingredients 5

1 side fresh salmon, boned but skin on (about 3 pounds)
2 tablespoons Dijon mustard
3 tablespoons good soy sauce
6 tablespoons good olive oil
1/2 teaspoon minced garlic

Steps:

  • Light charcoal briquettes in a grill and brush the grilling rack with oil to keep the salmon from sticking.
  • While the grill is heating, lay the salmon skin side down on a cutting board and cut it crosswise into 4 equal pieces. Whisk together the mustard, soy sauce, olive oil, and garlic in a small bowl. Drizzle half of the marinade onto the salmon and allow it to sit for 10 minutes.
  • Place the salmon skin side down on the hot grill; discard the marinade the fish was sitting in. Grill for 4 to 5 minutes, depending on the thickness of the fish. Turn carefully with a wide spatula and grill for another 4 to 5 minutes. The salmon will be slightly raw in the center, but don't worry; it will keep cooking as it sits.
  • Transfer the fish to a flat plate, skin side down, and spoon the reserved marinade on top. Allow the fish to rest for 10 minutes. Remove the skin and serve warm, at room temperature, or chilled.

You're only 5 ingredients away from one of our favorite simple summertime meals. Our grilled salmon recipe is ridiculously easy to prep and even more wonderful to eat! Paired up with a refreshing salad or grilled veggies, it's a meal that's destined to earn a spot on your weekly dinner rotation.

Provided by La Tourangelle

Time 25m

Yield 4

Number Of Ingredients 6

2 lb salmon filet
1 tablespoon La Tourangelle Extra Virgin Olive Oil
1 tablespoon Dijon Mustard
1 tablespoon mayonnaise
large handful of fresh chopped herbs (Use what you have here - we love a combo of chives, parsley, and oregano)
Kosher salt and freshly ground black pepper

Steps:

  • Heat a clean grill to medium temperature.
  • While the grill heats, prepare the fish - Whisk together the olive oil, mustard, mayonnaise and chopped herbs in a small bowl. Season the salmon liberally with salt and pepper and then spread the mustard mixture over the flesh of the fillet.
  • When the grill is ready, gently transfer the salmon onto the grates. Cover the grill and allow the salmon to cook (without flipping!) until it reaches your preferred doneness (about 15 - 17 minutes for medium depending on the thickness of the fish).
  • Using a large metal spatula, remove the fish from the grill and allow to rest for 2 - 3 minutes before serving. Arrange on a platter and garnish with lemon if desired.

MARINADE FOR GRILLED SALMON

Marinade for Grilled Salmon image

I read Derf's "Spiced Salmon" recipe (#137983) with interest since it also uses chutney as I do, but we prefer our salmon grilled w/the smoky, lime flavor of this marinade. I use the marinade all day & then reserve it to use for a sauce I make while my DH grills the salmon. We love this & the combination of the salmon & the marinade sauce has been a big hit with our friends.

Categories     Chutneys

Time 10m

Yield 4 serving(s)

Number Of Ingredients 11

4 (6 ounce) salmon fillets, 1 inch thick
1/4 cup olive oil
1/4 cup soy sauce
1/4 cup lime juice (may use lemon juice)
1/4 cup Worcestershire sauce
1/4 cup mango chutney
1/4 cup honey
2 garlic cloves, finely minced
1 teaspoon dill
reserved marinade
cream cheese

Steps:

  • Combine all marinade ingredients in large plastic bag, add salmon fillets & marinate for 6-8 hrs before grilling.
  • While salmon grills, transfer marinade to small saucepan by pressing through a sieve. This allows the bulk & flavors of the garlic & chutney to join the sauce without making it chunky.
  • Over low to medium heat only, add cream cheese & incorporate it into the sauce until you reach your desired consistency.

Tips:

  • Select the freshest salmon possible: Look for bright, firm flesh that springs back when pressed. Avoid salmon that is dull or has an off odor.
  • Choose a simple marinade: A few basic ingredients, such as olive oil, lemon juice, herbs, and spices, will allow the natural flavor of the salmon to shine through.
  • Marinate the salmon for at least 30 minutes: This will give the flavors time to penetrate the fish.
  • Cook the salmon over medium heat: This will help to prevent the fish from drying out.
  • Baste the salmon with the marinade while cooking: This will help to keep the fish moist and flavorful.
  • Cook the salmon until it is opaque and flakes easily with a fork: Overcooking will dry out the fish.

Conclusion:

Grilled salmon is a delicious and healthy meal that can be easily prepared with just a few ingredients. By following these tips, you can make sure that your grilled salmon is perfectly cooked and full of flavor.
