They go well as part of an old-fashioned fried chicken dinner with mashed potatoes and gravy, buttermilk biscuits, corn on the cob and watermelon pickles! -Karyl Goodhart, Geraldine, Montana

GRANDMA'S HUSH PUPPIES

Grandma's Hush Puppies image

My grandparent's used to have a Fish Fry at their house about once a month. Grandma always put the hush puppy batter together while grandpa sat on the back porch and fried them with the fish in his big frying cooker. You just can't have a Fish Fry without these wonderful hush puppies. This recipe makes about 15-20 hush puppies.

Time 20m

Yield 6 serving(s)

Number Of Ingredients 9

1 1/2 cups yellow cornmeal
1/2 cup all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 cup milk
1 egg (beaten)
1 (16 ounce) can creamed corn
1 onion (small diced up)

Steps:

  • Pour vegetable oil into the fryer of your choice. Allow it to be getting hot while mixing.
  • Mix the first five ingredients together in a large bowl.
  • Add the last four ingredients and mix well.
  • If the batter isn't the consistency of pancake batter, add a little more flour to thicken or a little more milk for thinning.
  • Take a metal spoon and dip into the hot grease. This allows the batter to just slide off into the grease after putting on spoon.
  • Now, take about 1 tbs. size spoonfuls and place into grease.
  • Allow to cook for about 5 minute or until golden brown and turn.
  • Let cook on other side for about 3 more minute.
  • Remove from grease and drain on paper towel lined plate.
  • Enjoy with fried fish and cole slaw.

ARKANSAS HUSH PUPPIES

Arkansas Hush Puppies image

This classic hush puppy recipe is nothing more than a dollop of cornmeal batter perked up with a little cayenne and onion and deep-fried until crunchy on the outside, and fluffy on the inside.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Time 20m

Yield Makes 16

Number Of Ingredients 11

1 cup yellow cornmeal
1/2 cup all-purpose flour
1 teaspoon sugar
1 teaspoon baking powder
1 teaspoon baking soda
Coarse salt
1/4 teaspoon cayenne pepper
1 large egg
1 cup low-fat buttermilk
3 tablespoons grated onion with juice
Vegetable or peanut oil, for frying (about 2 quarts)

Steps:

  • Whisk together cornmeal, flour, sugar, baking powder, baking soda, 1 teaspoon salt, and the cayenne. Whisk together egg, buttermilk, and onion. Stir egg mixture into cornmeal mixture. Batter will be as thick as a heavy pancake batter.
  • Heat 4 inches oil in a large heavy pot or Dutch oven over high heat until a deep-fry thermometer reaches 360 degrees. Working in batches, drop batter by the tablespoon into oil. Cook, turning occasionally, until cooked through and deep golden brown, 4 to 5 minutes. (Adjust heat so that temperature remains constant.) Transfer hush puppies to a paper-towel-lined baking sheet. Serve warm.

Tips:

  • Use cold water: Cold water helps make the batter light and fluffy.
  • Don't overmix the batter: Overmixing the batter can make the hush puppies tough.
  • Let the batter rest for a few minutes: This allows the flour to absorb the liquid and makes the batter easier to handle.
  • Use a well-seasoned cast-iron skillet: A well-seasoned cast-iron skillet will help the hush puppies cook evenly and give them a nice crust.
  • Cook the hush puppies over medium heat: Cooking the hush puppies over medium heat will help them cook through without burning.
  • Serve the hush puppies hot with your favorite dipping sauce: Hush puppies are best served hot with your favorite dipping sauce, such as tartar sauce, ranch dressing, or honey butter.

Conclusion:

Hush puppies are a delicious and versatile side dish that can be served with a variety of meals. They are easy to make and can be customized to your liking. With a few simple tips, you can make perfect hush puppies every time. So next time you are looking for a quick and easy side dish, give hush puppies a try. You won't be disappointed!
