1 lb shrimp, peeled and deveined (medium or large)
3 tomatoes, chopped
4 green onions, chopped
1/2 cup ketchup
1/4 cup cilantro, chopped
1 small jalapeno pepper, finely chopped
2 tablespoons Italian salad dressing

Steps:

  • Bring a pot of well salted water to the boil. Add shrimp to boiling water, place lid on pot and remove from heat. Set aside while you prepare the rest of the recipe.
  • Combine chopped tomatoes, green onions, ketchup, cilantro, jalapeno and salad dressing.
  • Drain the shrimp well and stir into the vegetable mixture. Cover and refrigerate for at least one hour. Overnight is even better.
  • Serve with Melba toast or assorted crackers.

2 ounces vodka
1 ounce kirschwasser
1 teaspoon strawberry liqueur
5 fresh strawberries
tonic water, as needed (use Schweppes Russian if available)
1 drop Angostura bitters
splash grenadine
halved fresh strawberry, for garnish
ice

Steps:

  • Purée the strawberries in a blender then pour over ice in a shaker before adding the Vodka, Kirsch and strawberry liqueur.
  • Shake thoroughly then pour into a highball glass with ice, and top-up with the Schweppes Russian.

1 tablespoon crushed garlic
½ cup finely chopped red onion
¼ cup fresh cilantro, chopped
1 ½ cups tomato and clam juice cocktail
¼ cup ketchup
¼ cup fresh lime juice
1 teaspoon hot pepper sauce, or to taste
¼ cup prepared horseradish
salt to taste
1 ripe avocado - peeled, pitted and chopped

Steps:
