1 tablespoon vegetable oil
½ pound boneless chicken breasts, thinly sliced
¼ cup chopped onion
1 tablespoon grated ginger
2 cloves garlic, minced
8 cups chicken broth, or more to taste
12 frozen pot stickers
6 cups chopped mustard cabbage (mustard leaves)
2 (3 ounce) packages ramen noodles (without flavor packet)
1 teaspoon soy sauce, or to taste
salt and ground black pepper to taste

Steps:

  • Heat oil in a 4-quart pot over medium-high heat. Add chicken, onion, ginger, and garlic. Stir-fry until chicken is no longer pink inside, 6 to 7 minutes. Pour in broth and bring to a boil.

Another of the recipes in Diana Liu's cookbook that my Dad gave me 42 years ago. Abalone is very expensive now and can be found in Asian markets in cans. There is also an alternative that I think is Conch. This is the best soup ever!

1/2 cup canned abalone, sliced
1/3 cup bamboo shoot, sliced
4 dried Chinese mushrooms (prepared by soaking in hot water for ten minutes, then squeeze and remove stems and slice)
1/2 lb chinese greens, cut into 1 1/2-inch lengths (bok choy)
2 quarts chicken broth
salt
1 egg

Steps:

  • Bring broth to a boil and add salt if using. Add Chinese greens; boil 2 minutes; add mushrooms and bamboo shoots; boil 5 minutes more. Add abalone before serving. Break raw egg into soup and let set 5 minutes, then stir into soup. Serve hot.

1/4 pound lean pork
1/2 pound mustard cabbage
6 cups Stock, Chicken, favorite stock or water
3/4 to 1 teaspoons salt
1/2 teaspoon sugar
1 dash pepper
1 teaspoon soy sauce

Steps:

  • 1. Sliver pork. Cut cabbage leaves in 1-inch sections. 2. Bring stock to a boil. Add pork and simmer, covered, about 5 minutes. 3. Add cabbage and simmer, covered, 5 minutes more. Stir in salt, sugar, pepper and soy sauce. VARIATIONS: * For the pork, substitute 1/4 pound smoked ham or 1/4 cup dried shrimp (soaked). * For the mustard cabbage, substitute round cabbage, shredded. * In step 3, add with cabbage, 1/2 cup each water chestnuts and bamboo shoots, both sliced. * Add 1 to 2 ounces peastarch noodles (soaked) at the very end, only to heat through. * Poach a Chinese salt egg and float on the soup as a garnish. 4 dried black mushrooms
4 ounces abalone
Stock, Chicken, favorite stock or water
1/4 cup smoked ham
1/2 cup lean pork
2 slices fresh ginger root
1 tablespoon cornstarch
1 tablespoon soy sauce
1 tablespoon sherry
1 tablespoon peanut oil
1/4 teaspoon salt
1 dash pepper
1/4 teaspoon salt
1 egg

Steps:

  • 1. Soak dried mushrooms. 2. Drain canned abalone, reserving liquid. Combine abalone liquid with enough cold stock or water to make six cups. 3. Cut mushrooms, abalone, ham and pork all in strips, but keep them separate. Mince ginger root. 4. Combine cornstarch, soy sauce and sherry. Add to pork and toss to coat. Let stand a few minutes. 5. Heat oil. Add salt and ginger and stir-fry a few times. Add pork and stir-fry until it loses pinkness. Remove from pan. 6. Meanwhile bring abalone-stock mixture slowly to a boil. Add mushrooms and stir-fried pork. Simmer, covered, 10 minutes. 7. Add abalone, ham strips, pepper and remaining salt. Cook only to heat through, about 2 minutes. (Don't overcook abalone it will toughen.) 8. Garnish with a poached egg (*Soups - Garnishing Soup). VARIATION: * For the pork, substitute 1/2 cup chicken breast, cooked.
