Time 1h30m

Yield 6-8 serving(s)

Number Of Ingredients 16

2 lbs ground beef
1/2 teaspoon ground cinnamon
2 teaspoons ground coriander
1 teaspoon ground turmeric
1 pinch cayenne pepper
salt, to taste
black pepper, to taste
2 garlic cloves, crushed
1 tablespoon vegetable oil
1 Spanish onion, finely chopped
2 (14 ounce) cans tomato sauce
4 sun-dried tomatoes, finely chopped
1 lb noodles
1 1/2 cups plain kefir (or yogurt)
2 garlic cloves, finely chopped
1/2 cup of fresh mint, chopped

Steps:

  • For the meatballs:.
  • In a bowl, combine the beef, cinnamon, coriander, turmeric, cayenne, salt, pepper, and half of the garlic. With clean hands, mix thoroughly, then shape the meat into 3/4-inch meatballs. Set aside and let sit for 30 - 90 minutes to allow flavours to meld.
  • In a large, heavy pan, heat the oil, add the onion, and cook over low heat for 10 to 15 minutes or until it is very soft. Turn the heat to medium-high and add the meatballs. Cook, turning them often, until they lose their pink color.
  • Add the plum tomatoes and remaining garlic. Cover the pan, turn down the heat, and simmer gently for 10 minutes. Add the sun-dried tomatoes, salt, and pepper and cook the mixture for 5 minutes over low heat, stirring once or twice.
  • For the noodles:.
  • Bring a large saucepan of water to a boil. Add the noodles and cook for 2 to 4 minutes or until they are tender but still have some bite. Drain the noodles and transfer them to a bowl. Stir in the kefir, garlic, and salt. Toss thoroughly and transfer to 6 wide bowls. Spoon meatballs around the edges of each bowl of noodles, add the mint to the center and serve at once.

Time 50m

Yield 8

Number Of Ingredients 15

½ pound ground beef
½ pound ground pork
1 ½ cups Italian-seasoned bread crumbs
¾ cup milk, divided
1 large egg, slightly beaten
1 clove garlic, minced
1 ½ teaspoons salt
½ teaspoon ground black pepper
⅛ teaspoon ground allspice
2 tablespoons salted butter
3 tablespoons all-purpose flour
1 ½ cups low-sodium beef broth
1 dash Worcestershire sauce, or to taste
1 (16 ounce) package egg noodles
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Preheat the oven to 475 degrees F (245 degrees C).
  • Combine ground beef, pork, bread crumbs, 1/2 cup milk, egg, garlic, salt, pepper, and allspice in a large bowl; mix until just combined. Use a rounded 1-tablespoon measure to form mixture into meatballs. Place meatballs on a baking sheet.
  • Bake in the preheated oven until golden brown and cooked through, 10 to 12 minutes, rotating sheets halfway through.
  • While the meatballs are baking, melt butter in a medium saucepan over medium-high heat. Add flour. Cook, whisking constantly, for about 1 minute, being careful not to burn or brown the flour. Gradually whisk in the remaining milk and broth. Bring to a boil. Reduce heat and simmer until sauce has thickened slightly, 2 to 3 minutes. Add Worcestershire sauce to taste and remove from the heat.
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
  • Drain any grease from the meatballs. Add meatballs to sauce; toss gently to coat. Turn on lowest heat to warm. Add milk or water to thin sauce if too thick.
  • Drain egg noodles and serve immediately topped with sauce, meatballs, and parsley.

ASIAN MEATBALLS WITH RICE NOODLES

Asian Meatballs With Rice Noodles image

Submitted for RSC #9. This whole recipe was a new experience for me...I was so happy it worked out! I made it as a last effort for the contest after 2 failed recipes. I knew what fresh Asian flavors I liked together so that is what inspired the meatballs. I was impressed with how flavorful they turned out! They did end up a little hot so feel free to cut down on the peppers. I loved the rice noodles so much that they will be come a regular quick meal in my home. I love the suggestions from reviewers to bake the meatballs. Why didn't I think of that? I do think the sesame oil is a very important flavor enhancer for the noodles. Thanks to everyone who tried this for the contest!

Time 2h10m

Yield 4

Number Of Ingredients 21

¾ cup plain yogurt
1 teaspoon chopped fresh mint leaves
2 cloves garlic, crushed
1 pound ground beef
1 ½ cups chopped onion
1 cup water
1 carrot, grated
¾ teaspoon salt
1 teaspoon ground black pepper
1 ½ teaspoons ground coriander
½ teaspoon ground cumin
26 wonton wrappers
1 tablespoon tomato paste
⅛ teaspoon red pepper flakes
2 tablespoons water
½ cup dried yellow split peas
⅛ teaspoon red pepper flakes
1 teaspoon ground coriander
¼ teaspoon ground cumin
1 cube chicken bouillon
1 ½ cups water

Steps:

  • In a small bowl, stir together yogurt, mint, and garlic. Refrigerate.
  • In a large skillet over medium heat, cook ground beef and onions until meat is browned, stirring occasionally to crumble; drain fat. Stir in 1 cup water, carrot, salt, black pepper, 1 1/2 teaspoons coriander, and 1/2 teaspoon cumin; simmer uncovered for 30 minutes or until water evaporates.
  • Lay out wonton wrappers on aluminum foil. Mound two large spoonfuls of beef mixture in the center of one wrapper. Dip a finger in water and trace it around all four edges. Lay a second wonton wrapper on top of the first, and press on all edges to seal. Roll up the edges to create a round, hat-shaped ravioli. Repeat, making 13 ravioli.
  • Place ravioli in steamer and steam 40 minutes.
  • Meanwhile, mix together the yellow split peas, 1/8 teaspoon red pepper flakes, 1 teaspoon coriander, 1/4 teaspoon cumin, chicken bouillon, and 1 1/2 cups of water in a saucepan. Bring to a boil, then simmer over medium-low heat for about 45 minutes, or until it reaches a thick slurry-like consistency.
  • Meanwhile, in the large skillet, mix remaining beef mixture with 2 tablespoons water, tomato paste, and 1/8 teaspoon red pepper flakes. Simmer over low heat until liquid has evaporated, about 10 minutes.
  • To serve, spread yogurt on a serving plate. Top with ravioli, and top again with split pea mixture. Finally, top with tomato and beef mixture. Serve immediately.

Tips:

  • Choose high-quality meat. Use ground beef that is at least 80% lean, or a combination of ground beef and ground lamb. This will ensure that your meatballs are juicy and flavorful.
  • Use fresh herbs and spices. Dried herbs and spices can be used in a pinch, but fresh herbs and spices will give your meatballs a much more vibrant flavor.
  • Don't overmix the meatball mixture. Overmixing will make the meatballs tough. Mix the ingredients just until they are combined.
  • Brown the meatballs before simmering them. This will help to keep the meatballs moist and juicy.
  • Simmer the meatballs in a flavorful sauce. This will help to infuse the meatballs with flavor.
  • Serve the meatballs over your favorite noodles or rice. You can also serve them with a side of vegetables or pita bread.

Conclusion:

Afghan meatballs with noodles is a delicious and hearty dish that is easy to make. With its aromatic blend of spices, tender meatballs, and flavorful sauce, this dish is sure to be a hit with your family and friends. Serve it over your favorite noodles or rice, and enjoy!
