1 can (28 ounces) diced tomatoes, undrained
1 cup fresh cilantro leaves
1/2 cup chunky peanut butter
3 garlic cloves, halved

1 teaspoon salt

3 pounds sweet potatoes (about 6 medium), peeled and cut into 1-inch pieces
1 can (15 ounces) chickpeas or garbanzo beans, rinsed and drained

8 cups chopped fresh kale

2 small jalapeno peppers, seeded and chopped
3 cloves garlic, minced
2 teaspoons minced fresh ginger
2 teaspoons ground cumin
½ teaspoon salt

⅛ teaspoon red pepper flakes
4 cups water
2 ½ pounds sweet potatoes, peeled and chopped into 2-inch pieces
2 (15 ounce) cans diced tomatoes, drained

1 (15 ounce) can sliced green beans, drained

1 x 210 g tin of kidney beans in water, (130g drained weight)
1 tablespoon tomato purée
1 tablespoon smooth peanut butter
1 small onion
1 sweet potato, (250g)
75 g fresh or frozen green beans
½ tablespoon olive oil

Steps:

  • Peel and finely chop the onion. Peel and dice the sweet potato, then finely chop the green beans. Heat the oil in a large pan on a medium heat, add the onion, then fry for 5 minutes, or until softened, stirring regularly. Drain and add the kidney beans, along with the sweet potato and tomato purée. Pour in 200ml water, then simmer with the lid on for 15 minutes. Add the green beans and cook for a further 5 minutes, or until the sweet potato and green beans are tender. Stir in the peanut butter. 1 tablespoon curry powder
2 medium onions
2 carrots
4 celery ribs
2 teaspoons garlic, minced
2 lbs large sweet potatoes (about 2 large ones)
2 cups low sodium vegetable broth
1 (28 ounce) can whole tomatoes
1 teaspoon salt, divided
1/4 teaspoon black pepper
1/4 teaspoon cayenne
1/2 cup chunky peanut butter
3 tablespoons peanuts, roasted
1/2 cup light coconut milk

Steps:

  • Prepare in advance your sweet potatoes by peeling them and chopping them into chunks. Dice your carrots, celery and onion. Drain and quarter your tomatoes from the can.
  • Heat 2 tablespoons of peanut oil in a large Dutch oven or stockpot over medium-high heat. Add curry powder and cook, stirring constantly for 1 minute. 3/4 cup peanut oil
2 large onions, chopped
3 tomatoes
4 1/2 cups water
1/4 cup tomato paste
1 teaspoon Vegesal
1 cup peanut butter
3 sweet potatoes, cut into chunks
6 carrots, thickly sliced in rounds
12 okra pods
3 bell peppers (red/green/yellow/orange), de-seeded and diced

Steps:

  • In a large heavy pot, brown chicken in hot peanut oil. Add 1 chopped onion and stir until golden brown. Peel tomatoes if you wish, then chop into chunks. Thin tomato paste with 1/2 cup of water, and add tomatoes and tomato paste to the pot.
  • Boil 4 cups of water and add to the pot with the vegesal. While the mixture boils gently, thin peanut butter with some of the hot pot liquid and stir it in gradually. Reduce heat and simmer for 30 minutes.
  • Begin adding vegetables, letting each simmer for 5 minutes or so before adding the next one. Cook until chicken and all the vegetables are tender. Crush or grind the second onion with the hot pepper. Add during the last 10 minutes of cooking.

1 medium yellow onion (diced) (about 2 cups)
3 medium cloves garlic (minced)
2 teaspoons ground cumin

4 cups low-sodium vegetable broth
1 15-ounce can crushed tomatoes
2 medium sweet potatoes (peeled and diced) (about 2 cups)
1 tablespoon fresh ginger
1/4 teaspoon ground red cayenne pepper (plus or minus to taste)
1/2 teaspoon kosher salt + more to taste
1/4 teaspoon freshly ground black pepper + more to taste
1/2 cup creamy peanut butter

Steps:

  • Cook the rice according to package instructions.

2 cups onions, chopped
1 garlic clove, minced
1 tablespoon fresh ginger, minced
2 teaspoons poppy seeds
1 teaspoon mustard seeds
1 tablespoon ground coriander
1/4 teaspoon ground cloves
2 russet potatoes, peeled, cut into 1/2-inch cubes
4 cups water
1 teaspoon salt, to taste
2 cups cauliflower, cut into bite-size florets
1 medium sweet potato, cut into 1/2-inch cubes
4 cups collard greens, sliced thin
1/4 cup dark raisin
1 tablespoon apple cider vinegar
