1/4 cup chicken broth
2 tablespoons agave
2 tablespoons fresh clementine juice
1/4 teaspoon chipotle powder
1/4 teaspoon ground cumin
Zest and juice of 1 lime
Kosher salt
1 pound 16/20 shrimp (extra jumbo)
Vegetable oil, for the grill plate
Steamed brown rice, for serving, optional
Rice wine vinegar, for seasoning rice, optional

Steps:

  • Whisk together the chicken broth, agave, clementine juice, chipotle powder, cumin, lime zest and juice and 1/4 teaspoon salt in a medium bowl. Add the shrimp and toss to coat. Marinate for 10 to 15 minutes at room temperature.
  • Preheat an indoor grill plate over high heat.
  • Set a strainer over a bowl and drain the shrimp completely, reserving the marinade for later. Place the shrimp in a single layer on a paper towel-lined plate and pat dry. Sprinkle with salt. Grease the grill plate with oil.
  • Grill the shrimp on both sides until super charred and no longer pink in the middle, 2 to 3 minutes per side. Remove to a bowl.
  • Heat a large nonstick skillet over medium-high heat; add the reserved marinade and simmer until reduced by about half, about 2 minutes. Add the cooked shrimp and stir to coat in the sauce. Season with salt. If serving with brown rice, season with a couple drops of rice wine vinegar, plate and serve.

1/4 cup lime juice
1-1/4 teaspoons , grated lime peel, , divided
salt
1 teaspoon rosemary, crushed
red hot pepper

1/8 teaspoon dried crushed
2 boneless skinless chicken breast halves (8 to 10 oz. each)
1 teaspoon cornstarch
1 tablespoon water

Steps:

  • Combine agave, lime juice, 1 teaspoon lime peel, salt, rosemary and pepper mix well. Sprinkle chicken breasts with salt and pepper to taste. Bake at 375°F for 30 minutes brush with agave mixture and bake 15 minutes longer or until juices run clear. Remove chicken from baking pan pour remaining sauce into pan and deglaze. Strain mixture into small saucepan bring mixture to boil. Combine cornstarch and water add to strained sauce. Cook and stir until mixture comes to boil. Boil 1 minute. Stir in remaining lime peel. Slice chicken breast pour hot sauce over slices.

5 limes
1/2 mango (about 13 ounces), pitted, peeled, and cut into chunks
1/2 teaspoon freshly grated ginger, plus several pieces for roasting
1 tablespoon honey
1 1/2 tablespoons olive oil
Salt and freshly ground pepper, to taste
One 3-pound whole chicken
1 tablespoon unsalted butter
Several stalks lemongrass

Steps:

  • Heat oven to 450 degrees. Grate zest and squeeze juice from one lime. Puree in food processor with mango, ginger, honey, oil, and salt to taste; mango should not be completely smooth. Reserve 3 tablespoons for Buckwheat-Noodle Salad; set aside remaining glaze.
  • Sprinkle chicken, inside and out, with salt and pepper. Puncture two limes; place in chicken cavity, and tie legs together with kitchen twine. Divide butter in half; slip pats under skin on each side of breast.
  • Halve remaining two limes, and strew roasting pan with limes, ginger pieces, and lemongrass. Place chicken in pan. Roast in bottom third of oven until chicken begins to brown, about 20 minutes. Baste with pan juices, and generously brush glaze over chicken. Continue to roast, basting and glazing every 10 minutes; cover with foil if chicken starts to burn. After 30 minutes, reduce oven to 350 degrees, and cook about 10 minutes, or until chicken has internal temperature of 185 degrees.
