1/2 lemon, juice only
2 tablespoons olive oil
1/4 to 1/2 cup hot water
For the falafel:
2 (15-ounce) cans chickpeas, rinsed and drained
1/4 cup fresh parsley
1/4 cup cilantro
2 cloves garlic
1 large shallot, chopped
3 tablespoons all-purpose flour
2 tablespoons sesame seeds
2 teaspoons ground cumin
1 teaspoon paprika
1/2 lemon, juice only
1 teaspoon salt
Spray olive oil, for cooking
For serving:
6 pita breads
Fresh lettuce
1 large tomato, sliced thin

Steps:

  • Dry chickpeas on paper towels. Place onions and garlic in the bowl of a food processor fitted with a steel blade. Add parsley, scallions, cilantro, cumin, salt, and red pepper flakes.
