2 buns (I use Brownberry sandwich thins with everything)
4 slices corned beef, 1/8-inch thick broken into bite sized pieces
3 tablespoons of sauerkraut with caraway seeds
3 teaspoons thousand island dressing
2 slices of reduced fat swiss cheese
4 sprays butter-flavored cooking spray

Steps:

  • Spray the outside of the sandwich thins.
  • Arrange the corned beef on the bottom half of each sandwich thin.
  • Sprinkle evenly with sauerkraut.
  • Drizzle thousand island dressing over the sauerkraut.
  • Top each with a slice of swiss cheese.
  • Carefully place in air fryer basket.
  • Cook for about 5 minutes on french-fry setting (400 degrees), or until cheese melts and tops are browned, check after about 2 minutes to make sure that the tops stayed on.

8 slices rye bread, thinly sliced
8 ounces turkey pastrami, thinly sliced
1/4 cup red onion, cut into four thin slices
8 tablespoons fat free thousand island dressing
4 ounces lowfat swiss cheese
1 cup sauerkraut, juice drained

Steps:

  • Spread dressing on each bread slice.
  • Build sandwiches by layering the pastrami, sauerkraut, onion, and cheese on four of the bread slices. Top with the remaining four slices of bread.
  • Place in a 350 degree oven for a few minutes until cheese is melted and bread is toasty.
  • Cut in half and enjoy!
