MOM'S AIR BUNS (ROLLS)

Mom's Air Buns (Rolls) image

This recipe for light, soft, buns did NOT come from my Mom, but it is so good that I dedicate it to all Moms who bake bread..or anyone who bakes bread for that matter! I will give the original recipe, but I admit that I now use the ABM to knead the dough, and will give instructions for this variation at the end. Preparation time is the length of time for the "dough" cycle on my bread machine. For anyone wishing to make 100% whole wheat buns,(a variation of this recipe, and equally delicious IMHO), I have submitted it as recipe #168802 with minor alterations. More tweaking...I now like Mom's 100% Whole Grain Air Buns, recipe #186744 even better for a healthier version.

Time 2h20m

Yield 16 buns

Number Of Ingredients 10

1/2 cup warm water
1/2 tablespoon yeast
1 teaspoon sugar
1/4 cup lard (I use shortening)
1/4 cup granulated sugar
1/2 teaspoon salt
1 tablespoon white vinegar
1 1/4 cups warm water
1 1/2 cups white bread flour
3 cups more white bread flour

Steps:

  • Mix the 1/2 cup warm water, yeast, and 1 tsp sugar, and allow to proof.
  • Melt the lard, and mix in sugar, salt, vinegar, and warm water. When body warm, add the proofed yeast, and beat in 1 1/2 cups flour. Let rest for 15 minutes.
  • Knead in approximately 3 cups more flour.
  • Let dough rise till double (approximately 2 hours).
  • Deflate dough, and form into buns, any size, (I make 16 large) or loaves. Rise till double (takes approximately one hour, but depends on size/shape chosen).
  • Bake buns at 350°F for approximately 20 minutes.
  • For ABM, in my machine, on the "dough" cycle, I use 2 teaspoons of bread machine yeast, and I reduce the water to about 1 1/2 cups, the flour to 4 cups, adding a tad more water or flour as it kneads to get a smooth, soft ball of dough. I leave the other ingredients as posted.

AIR FRYER RAMEN BUN BURGER FOR ONE

Air Fryer Ramen Bun Burger for One image

I ate a lot of instant ramen noodles as a kid and still enjoy them now on occasion. As an adult, I started experimenting with them to try different ways of eating them other than the package directions. This one isn't the most feasible but it was a lot of fun to make. The bun is seasoned and crunchy so it's like you get the burger, bun, and chips in every bite. I like to top mine with Sriracha mayo, red onions, and baby spinach but feel free to use your favorite toppings.

Time 45m

Yield 1

Number Of Ingredients 5

2 cups water
1 (3 ounce) package beef-flavored ramen noodles, seasoning packet reserved
1 small egg
cooking spray
4 ounces ground beef

Steps:

  • Pour water into a large saucepan and bring to a boil over high heat. Drop noodles in and boil for 3 minutes. Remove from heat and let sit for 2 minutes. Drain.
  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Meanwhile, whisk egg and 1/2 of the reserved seasoning packet together in a bowl. Gently stir in noodles until they are evenly coated. Divide noodles into 2 small round containers, which helps make more uniform buns.
  • Spray the basket of the air fryer with nonstick spray. Dump one portion of noodles into the basket. Flatten the noodle mixture with a spatula to form the bun. Cook for 4 minutes. Flip the bun over using a spatula and cook until desired brownness, about 4 minutes more. Transfer to a plate and repeat with remaining noodles.
  • Sprinkle remaining seasoning over the beef and form into a patty. Air fry for 4 minutes. Flip and cook for 4 minutes more. Sandwich the patty between the ramen buns.

Tips:

  • Use active dry yeast: This type of yeast is readily available and easy to use. Ensure it is fresh and not expired for optimal results.
  • Activate the yeast: Before adding the yeast to the dough, activate it by dissolving it in warm water with a pinch of sugar. This helps to ensure that the yeast is alive and will work properly.
  • Use the right amount of ingredients: Follow the recipe carefully and measure the ingredients accurately. Too much or too little of an ingredient can affect the outcome of the buns.
  • Knead the dough properly: Kneading the dough develops the gluten, which gives the buns their structure and texture. Knead the dough for at least 5 minutes, or until it is smooth and elastic.
  • Let the dough rise: After kneading, let the dough rise in a warm place until it doubles in size. This allows the yeast to work and produce gas, which will make the buns light and fluffy.
  • Shape the dough: Once the dough has risen, shape it into buns. You can make round buns, hamburger buns, or any other shape you desire.
  • Let the buns rise again: After shaping the buns, let them rise again for about 30 minutes. This will help them to develop their full flavor and texture.
  • Cook the buns: You can cook the buns in a preheated air fryer at 350°F for 8-10 minutes, or until they are golden brown. Keep an eye on them to prevent overcooking.

Conclusion:

Making air fryer buns is a fun and rewarding experience. By following the tips and instructions provided in this article, you can create delicious, homemade buns that are perfect for burgers, sandwiches, and other meals. Experiment with different recipes and techniques to find the ones that you and your family enjoy most. Happy baking!
