1 pork tenderloin (1 pound)
1/4 cup seasoned bread crumbs
Cooking spray
3 cups fresh broccoli florets
1/3 cup apricot preserves
2 tablespoons white wine or chicken broth
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1/4 teaspoon salt
Dash pepper
2-2/3 cups hot cooked brown rice

Steps:

  • Preheat air fryer to 375°. Cut tenderloin crosswise into 8 slices. Place bread crumbs in a shallow bowl. Dip pork slices in crumbs, patting to help coating adhere.
