Yield 6

Number Of Ingredients 13

3 tablespoons Greek yogurt
2 tablespoons mango chutney (such as Patak's®)
1 tablespoon mayonnaise
⅛ teaspoon salt
⅛ teaspoon pepper
⅛ teaspoon curry powder
⅛ teaspoon cayenne pepper
1 pound pork sausage (such as Jimmy Dean®)
6 eggs, hard-boiled and shelled
⅓ cup flour
2 eggs, lightly beaten
1 cup panko bread crumbs
cooking spray

Steps:

  • Combine yogurt, chutney, mayonnaise, salt, pepper, curry powder, and cayenne in a small bowl. Refrigerate until ready to use.
  • Divide pork sausage into 6 even portions. Flatten each portion into a thin patty. Place one egg in the middle and wrap the sausage around the eggs, sealing all sides. Set eggs aside on a plate.
  • Preheat air fryer to 390 degrees F (200 degrees C).
  • Place flour into a small bowl and beaten eggs into another small bowl. Place panko bread crumbs onto a plate. Dip each sausage-wrapped egg into flour, then dip into beaten egg, letting the excess drip off. Roll in bread crumbs and place onto a plate.
  • Spray basket of the air fryer with cooking spray and place eggs into the basket. Do not overcrowd; cook in batches if necessary. Cook for 12 minutes, turning eggs over halfway through. Repeat with remaining eggs. Serve with dipping sauce.

Time 30m

Yield 12

Number Of Ingredients 10

½ cup Greek yogurt
¼ cup stone-ground mustard
½ teaspoon garlic powder
¼ teaspoon ground cayenne pepper
⅓ cup all-purpose flour
12 ounces spicy pork sausage
12 quail eggs, hard-boiled and peeled
1 egg, beaten
1 cup panko bread crumbs
1 serving cooking spray

Steps:

  • Combine yogurt, mustard, garlic powder, and cayenne in a small bowl. Cover and refrigerate mustard dipping sauce until ready to use.
  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Place flour on a flat plate. Divide sausage into 12 equal balls. Using your hands, flatten each ball into a paper thin patty. Dust both sides of each patty with flour; the flour on one side will help the sausage adhere to the egg and the flour on the other side will keep the sausage from sticking to your hands.
  • Shape each sausage patty around a hard-boiled quail egg, making sure the egg is completely sealed inside. Dip each in the beaten egg and coat in bread crumbs.
  • Spray the air fryer basket with nonstick cooking spray. Place 6 eggs in the basket and mist the tops with cooking spray. Cook for 8 minutes. Flip and spray again. Cook 6 additional minutes. Repeat with remaining eggs.
  • To serve, slice each egg in half and serve with mustard dipping sauce.

Tips:

  • Choose the right eggs. Large or extra-large eggs are best for scotch eggs, as they will hold up better during the cooking process. Fresh eggs are also important, as older eggs may have a thinner shell that is more likely to crack.
  • Hard-boil the eggs perfectly. The eggs should be cooked until they are firm and the yolk is completely set. If the eggs are undercooked, they may not hold together well when you wrap them in sausage. If they are overcooked, the yolk may become dry and crumbly.
  • Use a good quality sausage. The sausage is the main flavor component of scotch eggs, so it's important to use a good quality sausage that you enjoy. You can use pork sausage, beef sausage, or a combination of the two.
  • Season the sausage well. Be sure to season the sausage with salt, pepper, and other spices to taste. This will help to enhance the flavor of the scotch eggs.
  • Wrap the eggs in sausage evenly. When you wrap the eggs in sausage, make sure to do so evenly. This will help to prevent the eggs from breaking during the cooking process.
  • Preheat your air fryer. Preheat your air fryer to the desired temperature before cooking the scotch eggs. This will help to ensure that the scotch eggs cook evenly.
  • Cook the scotch eggs until they are golden brown and crispy. The scotch eggs should be cooked until they are golden brown and crispy on the outside. This will take about 10-12 minutes in an air fryer.

Conclusion:

Scotch eggs are a delicious and easy-to-make appetizer or snack. They are perfect for parties, potlucks, or game day gatherings. With the help of an air fryer, you can make scotch eggs that are crispy on the outside and tender on the inside in just a few minutes.
