ROASTED TOMATILLO-POBLANO-AVOCADO SALSA

Roasted Tomatillo-Poblano-Avocado Salsa image

One of my favorite new cookbooks of this season is "A Mouthful of Stars" (Andrews McMeel), by Kim Sunée. The book is a memoir, travelogue and cookbook all rolled into one, written by an author who earlier published another compelling memoir with recipes, "Trail of Crumbs." Kim is a poetic world traveler who loves many cuisines. She is a big fan of taco trucks and loves salsa, the spicier the better. This salsa is based on her recipe for roasted tomatillo-poblano salsa. I love its balance of char, heat, acid and creamy. I'm a moderate when it comes to heat, but you can make this hotter by adding more chiles.

CHICKEN WITH TOMATILLOS AND POBLANOS

Chicken with Tomatillos and Poblanos image

A spicy chicken dish with a tomatillo sauce, best served over rice and accompanied with beans (black, red, or pinto are probably best). To increase the heat of the dish, you can always add more chiles - perhaps a serrano pepper.

POBLANO CHILE SAUCE

Poblano Chile Sauce image

Categories     Sauce     Blender     Garlic     Onion     Pepper     Roast     Low Fat     Quick & Easy     Summer     Gourmet

Yield Makes 2 cups

Number Of Ingredients 5

3/4 pound fresh poblano chiles (4 to 6) or yellow bell peppers (2 to 3)
2 garlic cloves
1 large onion
2 teaspoons vegetable oil
1 cup chicken broth (8 fluid ounces)

Steps:

  • Lay whole peppers (chiles or bell peppers) on their sides on racks of gas stove burners (preferably 1 to a burner) and turn flame on high. Roast peppers, turning them, until skins are blistered and have brown patches, 3 to 6 minutes. Do not overchar bell peppers; they will lose their bright color. (Alternatively, peppers may be roasted in same manner on rack of a broiler pan under a preheated broiler about 2 inches from heat.) Transfer peppers to a bowl and let stand, covered, until cool enough to handle. Peel peppers (wear rubber gloves when handling chiles). Cut off tops and discard seeds and ribs. Chop peppers. Peppers may be prepared 1 day ahead and chilled, covered.
  • Chop garlic and chop enough onion to measure 1 cup. In a nonstick skillet cook garlic and onion in oil over moderately low heat, stirring, until softened. Skim fat from broth. Stir in broth and peppers and simmer 1 minute. In a blender puree mixture until completely smooth (use caution when blending hot liquids) and season with salt.

1 fresh poblano chile*
3 unpeeled garlic cloves
2 tablespoons olive oil
1 scant cup cilantro sprigs
1 scant cup packed fresh spinach leaves

about 1/4 cup water
four 5-ounce pieces salmon fillet with skin

**available at Asian markets and some specialty foods shops and supermarkets

Steps:

  • Make coulis: Preheat oven to 400°F.
  • Quarter onion. In a shallow baking pan toss onion, tomatillos (in husks), chiles, and garlic cloves with 2 tablespoons olive oil until coated. Roast vegetables in middle of oven until tender, about 25 minutes.
  • Wearing rubber gloves, peel chiles. Cut off tops of chiles and remove seeds and ribs. Discard husks from tomatillos and peel garlic. In a blender purée roasted vegetables and all remaining coulis ingredients except water, adding just enough water, 1 tablespoon at a time, if necessary to facilitate blending. Season coulis with salt.
  • With a paring knife make 3 slits in top of each salmon fillet and stuff each with a basil leaf. With a mortar and pestle or an electric coffee/spice grinder coarsely grind peppercorns. Brush salmon with extra-virgin olive oil and sprinkle with ground peppercorns and sea salt. In a large nonstick skillet heat olive oil over high heat until hot but not smoking and sear salmon fillets, turning occasionally, until browned on all sides and just cooked through, about 7 minutes total. Serve salmon with coulis.

Tips:

  • Mise en place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and avoid scrambling later on.
  • Choose the right salmon: Look for wild-caught Alaskan salmon that is sustainably sourced. This type of salmon is typically higher in omega-3 fatty acids and has a more vibrant flavor.
  • Cook the salmon properly: Salmon is a delicate fish, so it's important to cook it gently. Pan-searing or baking are both good options. Avoid overcooking, as this will make the salmon dry and tough.
  • Make the tomatillo sauce ahead of time: The tomatillo sauce can be made up to a day in advance. This will give the flavors time to meld and develop.
  • Use fresh corn and poblano chiles: Fresh corn and poblano chiles will give the dish the best flavor. If you can't find fresh corn, you can use frozen corn that has been thawed and drained.
  • Serve the salmon with your favorite sides: This dish can be served with a variety of sides, such as rice, quinoa, or roasted vegetables.

Conclusion:

This Alaskan salmon with tomatillo sauce, fresh corn, and poblano chile is a delicious and healthy dish that is perfect for a weeknight meal. The salmon is cooked to perfection and the tomatillo sauce is flavorful and tangy. The corn and poblano chiles add a nice sweetness and smokiness to the dish. This is a dish that the whole family will enjoy.
