2 1/2 tsp baking powder
1 tsp salt
1/4 c vegetable oil
3/4 c milk
1 egg
1 1/2 c blueberries
1/3 c all purpose flour
1/2 c brown sugar, firmly packed
1/2 tsp cinnamon
1/4 c firm butter

Steps:

  • 1. In a medium mixing bowl, blend together 1 1/2 cups flour, sugar, baking powder, salt, oil, milk, egg and 1 cup blueberries.
  • 2. Beat thoroughly for 30 seconds and spread in a greased round 9x11-1/2-inch pan or an 8x8x2-inch pan.
  • 3. Combine 1/3 cup flour, brown sugar, cinnamon and butter.
  • 4. Sprinkle over batter and top with the remaining berries.
  • 5. Bake in a 375 degree oven for 25 to 30 minutes, until done.
  • 6. Don\'t overbake.
  • 7. Serve warm with butter or honey.

Tips:

  • Use fresh or frozen blueberries: Fresh blueberries are ideal, but frozen blueberries will work just as well. If using frozen blueberries, thaw them before using.
  • Don't overmix the batter: Overmixing the batter will make the coffee cake tough. Mix just until the ingredients are combined.
  • Bake the coffee cake until a toothpick inserted into the center comes out clean: This will ensure that the coffee cake is cooked through.
  • Let the coffee cake cool slightly before serving: This will help the coffee cake to hold its shape when you slice it.
  • Serve the coffee cake with your favorite toppings: Some popular toppings include powdered sugar, cream cheese frosting, or fresh fruit.

Conclusion:

This Alaskan blueberry coffee cake is a delicious and easy-to-make breakfast or brunch treat. It's perfect for any occasion, from a casual get-together to a special holiday meal.
