1 tablespoon butter
2 potato burger buns
1/2 pound ground beef
Kosher salt and freshly ground black pepper
Vegetable oil, for the skillet
4 slices deli-style yellow American cheese
Nancy's Special Sauce, recipe follows
2 thin slices red onion
8 pickle chips
2 slices beefsteak tomato
1 large leaf iceberg lettuce, torn in half
3 tablespoons mayonnaise
1 tablespoon ketchup
1 teaspoon yellow mustard
1 teaspoon pickle relish
1 teaspoon Sriracha
1 teaspoon white wine vinegar

Steps:

  • Heat a large cast-iron skillet over medium-high heat. Add the butter. When it foams, add the bread, cut-side down, and toast until golden brown, about 2 minutes. Transfer the bread to a platter.
  • Sprinkle the beef with salt and pepper and mix it in, using your hands. Shape the ground beef into four patties. Flatten the patties between sheets of wax paper to a 3/8-inch thickness. (The patties will be 1 1/2 times larger than your palms; it's ok if the edges look ragged, since the burgers shrink up a bit while cooking.)
  • Wipe the skillet lightly with vegetable oil using a paper towel. Add the patties to the skillet and cook on the first side for 3 minutes. Flip, season again, and cook for 2 minutes. Top each patty with a slice of American cheese and cook 1 minute more.
  • Smear the toasted buns on both sides with some of Nancy's Special Sauce. Stack a burger patty on top of each bun, add a slice of onion, then top with a second patty, followed by the pickles, tomatoes and lettuce. Cover with the top buns and eat with a napkin!
  • In a bowl, stir together the mayonnaise, ketchup, mustard, relish, Sriracha and vinegar until well-combined.

1 (1.25 ounce) envelope onion soup mix
½ cup mayonnaise
2 cups shredded Cheddar cheese
24 dinner rolls, split
½ cup sliced pickles

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray with cooking spray.
  • Mix together the ground beef and onion soup mix in a large skillet; cook and stir over medium-high heat until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Remove from heat. Stir the mayonnaise and Cheddar cheese into the ground beef mixture.

3/4 cup minced onion, divided
2 teaspoons garlic powder

  • Preheat oven to 350°. In a large bowl, mix beef, eggs, 1/2 cup minced onion, garlic powder, salt and pepper just until combined; do not overmix. Place meat mixture on a large, parchment-lined baking sheet; shape into two, 6-in. x 8-in. rectangles, each about 1/2-inch thick. 2 pound(s) ground sirloin
3 tablespoon(s) dill pickle relish
3 tablespoon(s) steak sauce or Worcestershire sauce
1 1/2 tablespoon(s) grill seasoning (I use the Mesquite Grill-Mates McCormick) I use it for everything
1 teaspoon(s) sweet paprika
1 small onion, finely chopped
1/2 cup(s) ranch dressing
1/2 cup(s) ketchup
1 teaspoon(s) ground black pepper
2 cup(s) chopped iceberg lettuce (you can buy bags all ready chopped, shredded, I use this)
1 package(s) King's Hawaiian sweet rolls
- American cheese, if wanted

Steps:

  • Mix meat and the next 4 ingredients by hand. Then I use my cookie scoop and HEAPING scoops and roll them in a ball and put them on a large cookie sheet. Use parchment paper so they do not stick to the pan.
  • Then put another paper on top. You can use wax paper also. Put on top of round balls. Then put another cookie sheet on top to flatten hamburger balls. Push down and flatten them.
  • Cook them inside or grill OR these patties can also be baked on cookie sheets in preheated 400 degrees F oven for 10 to 12 minutes. But, on a hot indoor or outdoor grill, these small burgers will take just 2 or 3 minutes on each side for medium doneness.
  • To make the sauce, combine ranch dressing with ketchup and black pepper. Use Kings Hawaiian Sweet Rolls, these are so good and have a hint of sweetness. Yummo!
  • I also added American cheese while cooking. Serve on dinner rolls with chopped lettuce, chopped onion, and Special Sauce.
