1/2 cup Dijon mustard
2 tablespoons fresh lemon juice, plus wedges for serving
1 garlic clove, crushed through a press
Coarse salt and ground pepper
1 large sirloin steak (about 1 1/2 pounds and 1 inch thick), trimmed and cut into 4 equal portions

  • Preheat oven to 450 degrees. In a small bowl, stir together mustard, lemon juice, and garlic; season with salt and pepper. Place cup mustard mixture in a resealable plastic bag. Add steaks, and rub to coat (reserve remaining mixture for serving). Let steaks marinate at room temperature 10 minutes, or refrigerate up to 1 day.
  • On a large rimmed baking sheet, toss potatoes with 1 tablespoon oil; season with salt and pepper. Roast 10 minutes, then add asparagus to sheet, and toss with another tablespoon oil. Season with salt and pepper. Roast until potatoes and asparagus are tender, about 15 minutes more.

SIRLOIN STEAKS WITH POTATOES AND SPICY CHILI BUTTER

Sirloin Steaks with Potatoes and Spicy Chili Butter image

Categories     Beef     Onion     Potato     Sauté     Steak     Fall     Jalapeño     Bon Appétit

Yield Serves 4

Number Of Ingredients 8

1/2 cup (1 stick) butter, room temperature
1/4 cup minced shallots
2 tablespoons minced seeded jalapeño chilies
2 onions, thinly sliced
3 russet potatoes, peeled, cut into 1/2-inch-thick rounds
1/4 cup chopped fresh Italian parsley
4 12-ounce sirloin strip steaks, trimmed
Vegetable oil

Steps:

  • Mix first 3 ingredients in small bowl. Season with salt and pepper. Spoon onto plastic wrap; roll into cylinder. Cover; chill at least 3 hours or overnight. Melt 2 tablespoons chili butter in heavy large pot over medium heat. Add onions; sauté until deep golden brown, about 25 minutes. (Can be made 1 day ahead; cover and chill.)
  • Steam potatoes until tender. Cool. Melt 3 tablespoons chili butter in heavy medium skillet over medium heat. Add potatoes; sauté until golden brown, about 8 minutes. Mix onions and parsley into potatoes. Season with salt and pepper. Sprinkle steaks with salt and pepper. Brush 2 heavy large skillets with oil; heat over high heat. Add 2 steaks to each skillet; cook to desired doneness, about 6 minutes per side for medium rare. Rewarm potato mixture. Spoon onto plates. Top with steaks. Slice remaining chili butter; arrange atop steaks.

Tips:

  • For the best results, use high-quality ingredients. Organic or grass-fed beef is ideal, and Yukon Gold potatoes are a great choice for their creamy texture.
  • Don't be afraid to season your steak liberally. A good rule of thumb is to use 1 teaspoon of salt and 1/2 teaspoon of black pepper per pound of meat.
  • Cook your steak to your desired doneness. Rare is 125 degrees Fahrenheit, medium-rare is 135 degrees Fahrenheit, medium is 145 degrees Fahrenheit, and well-done is 160 degrees Fahrenheit.
  • Let your steak rest for 5-10 minutes before slicing and serving. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.
  • For the mashed potatoes, use a ricer to get the smoothest and creamiest texture. If you don't have a ricer, you can mash the potatoes with a potato masher or food processor, but be careful not to overmix them.
  • Add flavor to your mashed potatoes with butter, milk, sour cream, chives, garlic, or grated Parmesan cheese.

Conclusion:

This classic dish of sirloin steak and mashed potatoes is a hearty and satisfying meal that is perfect for any occasion. With a few simple tips, you can easily create a delicious and memorable meal that your family and friends will love. So next time you're looking for a crowd-pleasing meal, give this recipe a try.
