CLASSIC ROAST POTATOES

Classic Roast Potatoes image

Roast potatoes are a weekly institution in most British families and households. When it's time for that Sunday lunch, it's time for roast potatoes. For the very best results it's important to use the right potato. Almost any potato will roast, but if you love that crispy edge with a light, fluffy and creamy interior, then floury potatoes are what's needed. To achieve the right finish, these potatoes will take at least 1 hour to cook; for extreme crispiness, cook for 1 1/2 hours.

Provided by MarieRynr

Categories     Potato

Time 1h10m

Yield 4-6 serving(s)

Number Of Ingredients 4

6 -9 medium potatoes (allowing 3 halves each)
salt
cooking oil or lard
1/4-1/2 cup seasoned flour

Steps:

  • Preheat oven to 400°F.
  • Peel the potatoes and halve lengthways.
  • Place in a saucepan and cover with cold, salted water.
  • Bring to the boil and then simmer for 5 to 6 minutes.
  • Drain in a colander and leave to stand for 2 to 3 minutes before shaking the colander gently.
  • This will begin to break down the edge of the potatoes.
  • These slightly rough edges will become crisp and crunchy during the roasting.
  • Heat a frying pan with 1/4 inch of oil or melted lard.
  • Once it's hot, the potatoes can be lightly rolled in the seasoned flour, shaking off any excess.
  • Fry the potatoes in the oil, turning occasionally until completely golden brown.
  • Now transfer the potatoes to a roasting pan.
  • Pour some of the cooking oil into the pan (approx. 1/8 inch deep), sprinkle the potatoes with salt and roast in the oven for 30 minutes before turning in the pan.
  • Roast for another 30 minutes.
  • Remove the crispy roast potatoes from the pan and serve.
  • A knob of butter can be melted over the potatoes to enrich the crispy roast taste.
  • For an ultra-crispy finish, increase the cooking time to 1 1/2 hours, turning the potatoes in the pan halfway through.

BEST ROAST POTATOES EVER

Best Roast Potatoes Ever image

I can hear you thinking "everyone knows how to do roast potatoes", but bear with me; following this recipe has given me the best never-fail perfect roast potatoes ever! Golden and crisp on the outside, soft and fluffy inside. There are other recipes posted on Recipezaar, but I've checked them and these directions are different! Obviously it helps if you use a variety of potato that is especially suitable for roasting (such as Maris Piper, King Edward or Desiree), but this recipe really will give you beautifully roasted potatoes that don't stick to the pan - the secret to success is in step 2.

Provided by Mrs B

Categories     Potato

Time 55m

Yield 8 serving(s)

Number Of Ingredients 4

4 lbs potatoes (chose the best variety you can get for roasting)
4 ounces vegetable shortening (such as Trex or Crisco vegetable shortening)
3 -4 bay leaves (optional)
sea salt (optional)

Steps:

  • Preheat the oven to 400 F, 200 C, gas mark 6; peel the potatoes and cut them into evenly sized halves or chunks.
  • Put the potatoes into a large saucepan, cover with cold salted water and bring to the boil; drain the water off as soon as it comes to the boil - this step isn't to cook the potatoes: it heats them through so they start roasting more quickly - return the potatoes to the hot pan and dry them over the heat (it is important that the potatoes are dry for roasting, otherwise they are likely to stick to the baking tray).
  • Slide a large baking tray into the oven to heat up for a few minutes, add the vegetable fat to the potatoes in the hot pan and let it melt; turn the potatoes in the melted fat until they are shiny and well coated, then tip them onto the hot baking tray.
  • Place the tray in the oven for about 45 minutes; add the bay leaves, if using, 15 minutes into the cooking time; turn and baste the potatoes a few times during cooking.
  • To serve, lift the potatoes from the baking tray with a slotted spoon, sprinkle with sea salt if desired: NOTE - if you are unable to serve the potatoes immediately, do not cover them (they'll loose their crispiness); instead keep them warm in the oven until you are ready.

Tips:

  • Choose the right potatoes: Waxy potatoes like Yukon Gold or Red Potatoes hold their shape well and are less likely to fall apart when roasted. For a crispier texture, opt for russet potatoes.
  • Cut the potatoes evenly: This will help them cook evenly. If you are roasting small potatoes, you can leave them whole, but larger potatoes should be cut into 1-2 inch pieces.
  • Toss the potatoes in oil and seasonings: This will help them brown and crisp up. Use a good quality olive oil or avocado oil, and add your favorite herbs and spices. Some popular choices include rosemary, thyme, paprika, and garlic powder.
  • Roast the potatoes at a high temperature: This will help them get crispy on the outside and tender on the inside. Aim for a temperature of 425°F (220°C).
  • Don't overcrowd the pan: If you overcrowd the pan, the potatoes will steam instead of roast. Make sure there is enough space between the potatoes so that they can get crispy all around.
  • Roast the potatoes until they are tender and browned: This will usually take about 20-30 minutes, depending on the size of the potatoes. Check them frequently and adjust the cooking time as needed.
  • Serve the potatoes hot: Roasted potatoes are best served immediately after they are cooked. You can garnish them with fresh herbs, grated Parmesan cheese, or a dollop of sour cream.

Conclusion:

Roasted potatoes are a delicious and versatile side dish that can be enjoyed with a variety of meals. With a few simple tips, you can make roasted potatoes that are crispy on the outside and tender on the inside. So next time you are looking for a quick and easy side dish, give roasted potatoes a try.
