ALMOST-FAMOUS HUSHPUPPIES

Almost-Famous Hushpuppies image

Ironically, one of the most popular dishes at the seafood chain Long John Silver's is a landlubber one: hushpuppies. The deep-fried cornmeal snacks gained a cult following soon after they debuted in 1977, and although two pups still come with every entrée, many diners end up ordering more on the side to get their fill. The recipe is a secret, but Food Network Kitchens created a perfect copy so you can make them at home. Beware: This recipe makes 30. Try not to eat them all at once.

Time 1h

Yield About 30 hushpuppies

Number Of Ingredients 10

1/3 cup minced onion
1 1/2 cups all-purpose flour
1/2 cup yellow cornmeal
1 teaspoon baking powder
1 1/2 teaspoons kosher salt, plus more for sprinkling
1 1/2 teaspoons sugar
2 teaspoons onion powder
1 large egg
1 cup whole milk
Vegetable oil, for frying

Steps:

  • Combine the onion, flour, cornmeal, baking powder, salt, sugar and onion powder in a bowl. Whisk the egg and milk in another bowl. Whisk the egg mixture into the flour mixture until smooth. Cover and chill 30 minutes.
  • Heat 2 inches vegetable oil in a large pot over medium heat until a deep-fry thermometer registers 350 degrees F. Working in batches, carefully drop heaping tablespoonfuls of batter into the hot oil. Fry, stirring occasionally, until golden, about 8 minutes per batch (return the oil to 350 degrees F between batches). Transfer to a paper towel-lined baking sheet using a slotted spoon. Sprinkle with salt. Let rest a few minutes before serving.

GRANDMA'S HUSH PUPPIES

Grandma's Hush Puppies image

My grandparent's used to have a Fish Fry at their house about once a month. Grandma always put the hush puppy batter together while grandpa sat on the back porch and fried them with the fish in his big frying cooker. You just can't have a Fish Fry without these wonderful hush puppies. This recipe makes about 15-20 hush puppies.

Time 20m

Yield 6 serving(s)

Number Of Ingredients 9

1 1/2 cups yellow cornmeal
1/2 cup all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 cup milk
1 egg (beaten)
1 (16 ounce) can creamed corn
1 onion (small diced up)

Steps:

  • Pour vegetable oil into the fryer of your choice. Allow it to be getting hot while mixing.
  • Mix the first five ingredients together in a large bowl.
  • Add the last four ingredients and mix well.
  • If the batter isn't the consistency of pancake batter, add a little more flour to thicken or a little more milk for thinning.

  • Now, take about 1 tbs. size spoonfuls and place into grease.
  • Allow to cook for about 5 minute or until golden brown and turn.
  • Let cook on other side for about 3 more minute.
  • Remove from grease and drain on paper towel lined plate.
  • Enjoy with fried fish and cole slaw.

BEST HUSH PUPPIES

Best Hush Puppies image

Some years ago, I was a cook on a large cattle ranch. One day, I thought back to the hush puppies I'd had as a child on a southern trip, and I ended up creating my own version of them. They go well as part of an old-fashioned fried chicken dinner with mashed potatoes and gravy, buttermilk biscuits, corn on the cob and watermelon pickles! -Karyl Goodhart, Geraldine, Montana

Tips:

  • Choose the right cornmeal. Stone-ground cornmeal will give your hushpuppies a more rustic flavor and texture than regular cornmeal.
  • Don't overmix the batter. Overmixing will make the hushpuppies tough. Mix just until the ingredients are combined.
  • Let the batter rest for a few minutes before frying. This will allow the cornmeal to absorb the liquid and make the hushpuppies more tender.
  • Fry the hushpuppies in hot oil. The oil should be at least 350 degrees Fahrenheit. If the oil is not hot enough, the hushpuppies will absorb too much oil and become greasy.
  • Don't overcrowd the pan. Fry the hushpuppies in batches so that they have room to cook evenly.
  • Serve the hushpuppies hot. Hushpuppies are best served immediately after they are fried, while they are still hot and crispy.

Conclusion:

Alligator hushpuppies are a delicious and unique twist on a classic Southern dish. They are easy to make and can be served as an appetizer, side dish, or main course. Whether you are looking for a new way to enjoy alligator meat or simply want to try something different, alligator hushpuppies are a great option.
