EASY ALMOST FAT FREE CORNBREAD

Easy Almost Fat Free Cornbread image

I wanted cornbread for dinner and was having a hard time finding a good low fat recipe. Many included corn kernels and my family won't eat that in cornbread! I came across this one in a Weight Watchers cookbook, though this recipe was listed in order for you to make it to use in cornbread stuffing. Therefore I was worried that it would not be good to eat on its own. But it was tasty! And it does not have the funny consistency that some fat free baked goods do. It makes 12 servings and each serving is only 2 WW points!

LOW FAT, SUGAR FREE CORNBREAD

Low Fat, Sugar Free Cornbread image

This is a low cal modification of my mom's cornbread recipe. Using Splenda instead of sugar and "I Can't Believe It's Not Butter Lite" instead of butter or oil, makes a big difference in calories but not in taste. I just made some to serve with chili and it was great!

Moosewood Restaurant Almost Fat-Free Cornbread image

We are trying to cook healthier this year. This cornbread uses cooked pumpkin, squash or sweet potato puree. A 4 oz. or 41/2 oz. jar of baby food (check to make sure it is just puree) works well in this recipe. This gives the cornbread a deep golden color.

FAT FREE CORNBREAD

This is my own variation of a great healthy recipe published by Dr. Dean Ornish. I love this with bean soups. The 7x9 pan fits perfectly in the toaster oven. A jar of applesauce goes bad quickly in my home, so I started buying the 6 packed individuals.

Categories     Quick Breads

Time 30m

Yield 8 serving(s)

Number Of Ingredients 6

1 cup unbleached all-purpose flour
1 cup whole grain yellow cornmeal
2 teaspoons baking powder
1 cup vanilla soymilk
1/2 cup unsweetened applesauce
2 egg whites

Steps:

  • Preheat oven to 425 degrees.
  • Spray a 7 x 9 nonstick pan lightly with nonstick spray.
  • In a medium bowl, stir flour, cornmeal and baking powder together.
  • In a large bowl, whisk together milk, applesauce and egg whites.
  • Preheat the pan 1 minute, not to burn the spray.
  • Lightly stir all ingredients to a lumpy blend in the large bowl and pour into preheated pan.
  • Bake 20 minutes or until top is lightly browned.

Tips:

  • Use whole wheat or cornmeal flour: These flours are higher in fiber and nutrients than white flour, and they will give your cornbread a more rustic flavor and texture.
  • Add some sweetness with natural alternatives: Instead of using refined sugar, try adding a touch of honey, maple syrup, or coconut sugar to your cornbread. These natural sweeteners will provide a healthier and more flavorful alternative.
  • Reduce the fat content: Traditional cornbread recipes often call for a lot of butter or oil. To make a healthier version, you can reduce the amount of fat by using low-fat or fat-free milk, yogurt, or applesauce. You can also try using a nonstick cooking spray to grease the pan instead of butter.
  • Add some healthy mix-ins: To boost the nutritional value of your cornbread, try adding some healthy mix-ins like chopped vegetables, fruits, nuts, or seeds. Some popular options include corn kernels, black beans, zucchini, peppers, blueberries, walnuts, and pecans.
  • Experiment with different cooking methods: Cornbread can be cooked in a variety of ways, including baking, frying, and grilling. Experiment with different methods to find the one that you like best. If you are looking for a healthier option, baking is a good choice.

Conclusion:

With a few simple swaps and substitutions, you can easily make a healthier version of cornbread that is still just as delicious as the traditional version. By using whole wheat or cornmeal flour, natural sweeteners, and reducing the fat content, you can create a cornbread that is lower in calories, fat, and sugar without sacrificing any flavor. And by adding some healthy mix-ins, you can boost the nutritional value of your cornbread even more. So next time you are craving cornbread, try one of these healthier recipes. You won't be disappointed!
