AMARETTO CHOCOLATE TART WITH APRICOT CREAM

Amaretto Chocolate Tart with Apricot Cream image

Provided by Giada De Laurentiis

Categories     dessert

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 19

Butter, for greasing the tart pan
1 cup all-purpose flour, plus more for dusting
1/2 cup almond flour
1/3 cup slivered almonds
1/3 cup unsweetened cocoa powder
3 tablespoons sugar
1 stick (1/2 cup) unsalted butter, cut into 1/2-inch pieces, chilled
1/4 teaspoon fine sea salt
2 tablespoons iced water, plus extra, as needed
2 cups bittersweet chocolate chips, such as Ghirardelli (12 ounces)
1/2 stick (1/4 cup) unsalted butter, cut into 1/2-inch pieces, at room temperature
3 eggs, beaten
2 tablespoons amaretto liqueur
2 tablespoons sugar
1 teaspoons pure vanilla extract
1/2 cup heavy whipping cream
1/4 cup apricot jam, such as Bonne Maman
1/2 teaspoon pure vanilla extract
Special equipment: One 9-inch tart pan with a removable base

Steps:

  • Place an oven rack in the center of the oven and preheat to 350 degrees F. Liberally butter the tart pan.
  • For the crust: Combine the all-purpose flour, almond flour, almonds, cocoa powder and sugar in a food processor. Process until the almonds are finely ground. Add the butter and pulse until the mixture forms a coarse meal. With the processor running, gradually add 2 tablespoons of iced water until the mixture forms a ball, adding extra water, as needed, if the mixture is too dry. Form the dough into a disc and wrap in plastic. Refrigerate for 20 minutes.
  • Roll out the dough into a 10-inch circle on a lightly floured work surface. Place the dough in the tart pan and trim any excess dough from the top of the pan. If the dough cracks, press scraps of dough into the cracks to seal. Prick the dough all over, using a fork, and bake for 15 minutes. Let the crust cool for 15 minutes.
  • For the filling: Place the chocolate and butter in a small bowl over a saucepan of barely simmering water. Stir occasionally until the chocolate has melted and the mixture is smooth. Beat the eggs, liqueur, sugar and vanilla in a medium bowl. Pour the melted chocolate into the egg mixture and whisk until smooth. Pour the filling into the prepared crust. Place the tart pan on a baking sheet and bake until the filing has set and begins to crack slightly on top, 22 to 25 minutes. Allow the tart to cool completely, about 1 hour.
  • For the apricot cream: Beat the cream at high speed until stiff peaks form, using a hand mixer. Add the jam and vanilla. Beat until the jam is incorporated into the cream.
  • Remove the tart from the pan and cut into thin wedges. Serve with a dollop of apricot cream.

ITALIAN STYLE AMARETTO-PEACH CRISP

Italian Style Amaretto-Peach Crisp image

Peach crisp goes to Italy. This is so good! Frozen peaches work well in this, so keep this in mind in the dead of winter, when you need to be reminded of summer. For a lovely variation, try using pitted sweet cherries (fresh or frozen) in combination with the peaches or by themselves. Recipe from Mollie Katzen.

Provided by BecR2400

Categories     Dessert

Time 45m

Yield 6 serving(s)

Number Of Ingredients 8

2 lbs fresh sliced peaches (or frozen)
2 teaspoons lemon zest
2 tablespoons fresh lemon juice
2 tablespoons amaretto liqueur (optional)
36 amaretti cookies (crunchy Italian almond macaroons)
1 cup sliced almonds
1/4 cup brown sugar crystals (optional)
1/2 cup butter, melted

Steps:

  • Preheat oven to 350°F.
  • Arrange the peach slices in an 8x8-inch pan or a gratin dish. (NOTE: If you are using frozen peaches, you don't need to defrost them first, but you do need to separate them.) Sprinkle with lemon zest, lemon juice, and Amaretto, if desired.
  • Place the amaretti in a food processor and grind into crumbs with a few short bursts. Add the almonds during the last burst or two, so they get broken up but not finely ground. Stir in the optional sugar, if desired. (If you are in need of a little exercise, you can bypass the food processor. Put the cookies in a plastic bag and whack them mercilessly with a rolling pin. Add the almonds and optional sugar, and shake well.)(NOTE: I skip this step. Instead, I just add the cookies to the butter mixture (the cookies will soften in the melted butter/liquids). Mix and crush with a wooden spoon).
  • Transfer the cookie mixture to a bowl, pour in the melted butter, and mix with a fork until well combined. Sprinkle the topping over the peaches, patting it into place.
  • Bake for 25 minutes, or until golden. Serve warm, at room temperature, or cold, plain or `a la mode.

AMARETTO PEACHES

Amaretto Peaches image

A super-easy cheat from www.cannedfood.co.uk

Provided by cannedfood

Time 20m

Yield Serves 4

Number Of Ingredients 8

1 (410g) can peach halves, in natural juice, drained
1 (425g) can creamed rice pudding
50g amaretto biscuits, lightly crushed
25g butter, softened
25g soft brown sugar
1 egg yoke
4 tbsp amaretto liquor
1/2 tsp vanilla extract

Steps:

  • Preheat the oven 180C/ 350F/Gas5.
  • Cream the butter and sugar in a bowl with wooden spoon, add the egg yoke, 1/2 the liquor and biscuits and mix well.
  • Mix the rice pudding with the vanilla extract and divide between 4 ramekins.
  • Place a peach half, cut side up, on the top of the rice and spoon the amaretto mixture into the hole where the stone was. Drizzle over the remaining amaretto.
  • Place in the middle of the oven and bake for 8-10 minutes, until the top is lightly golden and bubbling.
  • Sit the ramekin on a small plate with a couple of amaretto biscuits on the side.

Tips:

  • Choose ripe peaches: Using ripe peaches will ensure that your tart is sweet and juicy. You can tell if a peach is ripe by its color and texture. Ripe peaches should be a deep yellow or orange color, and they should be slightly soft to the touch.
  • Use a good quality amaretto liqueur: The amaretto liqueur is a key ingredient in this tart, so it's important to use a good quality one. Look for an amaretto liqueur that is made with real almonds and has a rich, nutty flavor.
  • Don't overwork the dough: Overworking the dough will make it tough. Mix the dough just until it comes together, then form it into a ball and refrigerate it for at least 30 minutes before rolling it out.
  • Blind bake the tart crust: Blind baking the tart crust will help to prevent it from becoming soggy. To blind bake the crust, preheat your oven to 350 degrees Fahrenheit. Line the tart crust with parchment paper and fill it with pie weights or dried beans. Bake the crust for 15-20 minutes, or until it is golden brown.
  • Use fresh fruit: Fresh fruit will give your tart the best flavor. If you can't find fresh peaches, you can use frozen or canned peaches. However, fresh peaches will give you the best results.
  • Serve the tart warm or cold: This tart can be served warm or cold. If you're serving it warm, let it cool for a few minutes before slicing it. If you're serving it cold, chill it for at least 2 hours before slicing it.

Conclusion:

This amaretto peach tart is a delicious and easy-to-make dessert that is perfect for any occasion. The sweet and juicy peaches, the nutty flavor of the amaretto liqueur, and the flaky crust all come together to create a truly special tart.
