AUTHENTIC ITALIAN MEATBALLS
Meatball recipes are often challenged by chefs who claim, "Mine are the best!" Even though my meatballs ARE the best, I will make no such claim. Try them for yourself! This meatball recipe was given to me by my father who got it from a little old lady from Italy that he knew. It's amazing that she gave up her recipe to him, but I sure am glad she did!

- Mix all ingredients in a large bowl by hand.
- Use your bare hands for best results.

Steps:
- Heat olive oil in a large skillet over medium heat; cook and stir onion and garlic until onion is tender and translucent, about 5 minutes. Stir in crushed tomatoes, tomato paste, red wine, Italian seasoning, sugar, garlic powder, and garlic salt. Season with salt and black pepper. Bring to a boil, reduce heat to medium-low, and continue simmering while preparing meatballs.
- Mix ground beef, egg, bread crumbs, mozzarella cheese, and parsley in a large bowl. Roll walnut-size meatballs and place in the simmering sauce, making sure sauce covers entire meatball. Increase heat to medium and simmering until meatballs are no longer pink in the center, about 40 minutes, turning meatballs once about halfway through.
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain.
- Serve meatballs and sauce over spaghetti with a sprinkle of Parmesan cheese.

AMAZING MEATBALLS
My family is big on spaghetti, but we never really did the spaghetti and meatball thing, usually we just chop up sausage links. I had some students make meatballs for a final and it was good. So, I wanted to try and took a Johnsonville recipe and tweaked it. These are AMAZING! They were great with pasta but mind blowing on top of...

- 3. Shape mixture into 20 meatballs and place on broiling pan. Bake for 20-30 minutes or until meatballs are cooked through. Serve with your favorite spaghetti sauce, pasta/bread.
Tips:
- When choosing ground beef, opt for a leaner cut, such as 90% lean or higher, to reduce the amount of fat in the meatballs.
- Use a food processor to finely chop the vegetables and nuts, which will help them to blend smoothly into the meatball mixture.
- If you don't have a food processor, you can grate the vegetables and nuts on a fine grater.
- Be sure to drain the vegetables well before adding them to the meatball mixture, as excess moisture can make the meatballs soggy.
- When forming the meatballs, be gentle and do not overwork the mixture, as this can make them tough.
- To ensure that the meatballs are cooked evenly, place them in a single layer on a baking sheet.
- Bake the meatballs for 20-25 minutes, or until they are cooked through and browned on the outside.
- Serve the meatballs immediately with your favorite sauce and sides.
