Time 2h

Number Of Ingredients 10

1 pound tri-color pasta (like Rotelle or Rotini)
Good Seasons Italian Dressing - double recipe (2-packs) prepared with balsamic vinegar and canola oil
1 small red onion, diced
1 yellow (or red or orange) bell pepper, chopped
2 cups chopped carrots
2 cups fresh broccoli florets
2 cups cubed (or sliced) pepperoni
1 small (4-oz) can sliced black olives (approximately 1/4 cup sliced olives)
1/4-1/2 cup Kraft grated parmesan/Romano cheese blend (to taste)
Cubed cheddar cheese to taste

Steps:

  • Cook pasta according to package directions. Rinse in cold water and drain. Prepare Good Seasons Italian Dressing in accordance with package directions, using balsamic vinegar and canola oil. Prepare 2 packages, as the pasta and vegetables soak up the dressing.
  • Mix pasta and remaining ingredients - except for the cheddar cheese - in a large bowl, mixing well. Chill at least one hour before serving. Add cheddar cheese before serving.
  • Salad tastes better the longer it sits in the refrigerator. I prefer to make it the day before I plan to use it as it gives the flavors a chance to marinate the pasta and veggies.

Tips:

  • Choose the right pasta: Short pasta shapes like penne, rotini, or farfalle are ideal for pasta salad because they can hold the dressing and toppings well.
  • Cook the pasta al dente: This means cooking the pasta until it is just tender but still has a slight bite to it. This will prevent it from becoming mushy when you add the dressing.
  • Let the pasta cool completely before adding the dressing: This will help the pasta to absorb the dressing more evenly.
  • Use a light and flavorful dressing: A vinaigrette or a light mayonnaise-based dressing is a good choice for pasta salad. Avoid using heavy or creamy dressings, as they can weigh down the salad.
  • Add a variety of vegetables and herbs: This will give your pasta salad a colorful and flavorful boost. Some good choices include cherry tomatoes, bell peppers, cucumbers, onions, zucchini, basil, and parsley.
  • Don't be afraid to experiment: There are endless possibilities when it comes to pasta salad. Feel free to add your favorite ingredients and create your own unique recipe.

Conclusion:

Pasta salad is a refreshing and delicious dish that is perfect for summer gatherings. It is easy to make and can be customized to your liking. With a little planning, you can create a pasta salad that will be the hit of your next party.
