AMERICAN PUMPKIN PIE

American Pumpkin Pie image

This is the only pumpkin pie recipe I've ever used. It's been in the family for at least sixty years! Since, in our family, one pie is never enough, I like to triple the filling recipe and divide it into two pie shells, since, as my Mom always says, "No body likes a skimpy pie!" (Of course, this will add a few minutes to the baking time, too.)

Steps:

  • 1. 3 eggs 1/2 cup sugar 1/4 cup packed brown sugar 2 cups pumpkin mush* 2 tsp. cinnamon 1 tsp. ginger 1/2 tsp. cloves 1/2 tsp. salt 1- 12oz can evaporated milk 1 pie shell
  • 2. Preheat oven to 450 degrees. In a large non-metal bowl combine sugars and eggs. Add in the pumpkin mush, the spices, salt, and evaporated milk. Pour the filling into the pie shell. Bake for 10 minutes, then reduce heat to 350 and bake for another 50 minutes, or until pie sets. Makes 6-8 servings. *Pumpkin mush: cut a medium pumpkin in half. Prick the skin several times with a fork, and place on a cookie sheet, cut-side up. Bake for 50 minutes or until very soft when poked with a fork. Let the pumpkin cool, then scoop out the seeds with a spoon. Scoop out the pumpkin meat, and throw away the skin. Mash the pumpkin meat with a potato masher or puree in a blender/food processor. Makes about 4 cups.

Tips:

  • For the smoothest filling, use a food processor or blender to puree the cooked pumpkin.
  • Be sure to use evaporated milk, not regular milk, in the filling. Evaporated milk is thicker and gives the pie a richer flavor.
  • Don't overmix the filling. Overmixing can make the pie dense and tough.
  • Bake the pie in a preheated oven. This helps to prevent the crust from becoming soggy.
  • Let the pie cool completely before serving. This allows the filling to set and the flavors to meld.
  • Serve the pie with whipped cream, ice cream, or a dollop of sour cream.

Conclusion:

Pumpkin pie is a classic American dessert that is perfect for Thanksgiving, Christmas, or any other special occasion. With its creamy, spiced filling and flaky crust, pumpkin pie is a surefire crowd-pleaser. Follow these tips to make the best pumpkin pie you've ever tasted!
