TURKEY TACOS

Turkey Tacos image

Thinly sliced turkey, well-seasoned and pan-seared, makes an excellent quick taco filling. These actually bear more resemblance to authentic Mexican food than all those crisp ground beef-filled tacos. This recipe can be assembled quickly from things that are easy to keep in the house, but can be adapted to include leftovers in your refrigerator. If you have only pink beans, use them instead; add tomato slices, if you have them, or other pickled vegetables instead of the shallots.

Categories     main-dish

Time 12m

Yield 4 servings

Number Of Ingredients 9

1 pound turkey scallops
2 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon pepper
4 corn tortillas
1 cup refried black beans
1/4 cup red salsa
1/4 cup pickled shallots
1 avocado, sliced

Steps:

  • Combine turkey scallops in a mixing bowl with oil, salt and pepper. Heat the grill or dry cast-iron pan over high heat until smoking. Sear the turkey slices about 1 minute per side. Transfer to a cutting board. Chop into 1/2 inch strips and reserve in a bowl with the juices from the board.
  • To make tacos, toast the tortillas. For each serving, stack 2 tortillas and spread with a layer of black beans. Top with seared turkey strips, a tablespoon each of salsa and pickled shallots, and avocado slices. Roll and serve hot.

HEARTY TURKEY TACOS RECIPE BY TASTY

Hearty Turkey Tacos Recipe by Tasty image

Here's what you need: tomatillo, jalapeño, garlic, medium white onion, fresh cilantro, lime, kosher salt, olive oil, ground turkey, medium white onion, kosher salt, McCormick® Hearty Spice Blend, chili powder, corn tortilla, crumbled cotija cheese, radish, fresh cilantro, Lime wedge

Provided by Tasty

Categories     Dinner

Yield 6 servings

Number Of Ingredients 18

1 lb tomatillo, husks removed
1 jalapeño, seeded
3 cloves garlic
½ medium white onion
½ bunch fresh cilantro
1 lime, juiced
kosher salt, to taste
1 teaspoon olive oil
1 lb ground turkey
½ medium white onion, diced
1 teaspoon kosher salt
1 tablespoon McCormick® Hearty Spice Blend
¼ teaspoon chili powder
corn tortilla
4 tablespoons crumbled cotija cheese
radish, thinly sliced
fresh cilantro, chopped
Lime wedge

Steps:

  • Make the tomatillo salsa: Place the tomatillos in a medium saucepan and cover with water. Bring to a boil, then reduce the heat to low. Simmer until the tomatillos have turned darker green in color and some of the skins have started to burst. Remove from the water and set aside to cool.
  • In a food processor, combine the jalapeño, garlic, onion, cilantro and cooled tomatillos. Blend until the cilantro and onion have broken down, but you can still see the tomatillo seeds. Be careful not to overblend. Season with the lime juice and salt.
  • Make the turkey filling: Heat the olive oil in a large skillet over medium heat. Add the onion and cook until starting to soften and caramelize, about 10 minutes.
  • Increase the heat to medium-high and add the ground turkey. Season with the salt, Hearty spice blend, and chili powder. Stir occasionally, allowing the turkey to brown slightly. Once the turkey is cooked through, about 5 minutes, remove the pan from the heat.
  • Heat the tortillas in a clean skillet or over a medium-low flame on a gas burning stove. Wrap the hot tortillas in a clean kitchen towel to keep warm as you heat the remaining tortillas.
  • Assemble the tacos: Fill the hot tortillas with the turkey filling and garnish with salsa, cheese, radishes, and cilantro. Serve with lime wedges on the side.
  • Enjoy!

Tips:

  • Use a variety of spices: Taco seasoning, chili powder, cumin, and paprika are all classic taco spices. But don't be afraid to experiment with other spices, such as oregano, chipotle powder, or smoked paprika.
  • Don't overcook the turkey: Turkey can easily become dry if it's overcooked. Cook it until it is just cooked through, or until it reaches an internal temperature of 165 degrees Fahrenheit.
  • Use a variety of toppings: The possibilities are endless when it comes to taco toppings. Some popular choices include shredded lettuce, diced tomatoes, sour cream, guacamole, and salsa.
  • Make sure your tortillas are warm: Warm tortillas are more pliable and easier to fold. You can warm them in the microwave, in a skillet, or on a comal.
  • Experiment with different types of tortillas: Corn tortillas are the traditional choice for tacos, but you can also use flour tortillas, whole wheat tortillas, or even plantain tortillas.

Conclusion:

Turkey tacos are a delicious and versatile dish that can be easily customized to your liking. With a little creativity, you can create a taco that is uniquely your own. So next time you're looking for a quick and easy meal, give turkey tacos a try. You won't be disappointed!
