AMISH BAKED OATMEAL
I got this recipe from a bed and breakfast in Amish country of Pennsylvania. My family is Pennsylvania Dutch, so we were out there almost every summer. It's a great, filling breakfast. Serve with fresh or canned peaches and a splash of milk or half-and-half.

AMISH BAKED OATMEAL
This recipe came from an old Amish cookbook of mine. It tastes like an oatmeal cookie. It stores well in the refrigerator and can be reheated in the microwave and served with milk. This has to sit overnight, so plan accordingly. It is well worth the wait, however!

Steps:
- 1. Preheat oven to 350 degrees. Butter an 8 by 8-inch baking dish, set aside.
- 2. In a large mixing bowl whisk together eggs.
- 3. Add in brown sugar, baking powder, cinnamon, vanilla and salt and whisk until no lumps remain
- 4. Stir in milk and melted butter then mix in oats.
- 5. Pour into prepared baking dish and spread evenly (at this point you can refrigerate overnight if desired or bake immediately).
- 6. Bake in preheated oven 30 - 40 minutes until set.
- 7. Cut into squares and serve warm with fresh fruit, nuts, milk, a little cream or half and half, maple syrup or honey if desired.
Tips:
- Use old-fashioned oats. Quick oats or instant oats will not give you the same texture and flavor as old-fashioned oats.
- Soak the oats overnight. This will help them cook more evenly and give them a creamier texture.
- Use a variety of milk. You can use whole milk, skim milk, or even almond milk or soy milk.
- Add your favorite spices. Cinnamon, nutmeg, and ginger are all popular choices.
- Don't overcook the oatmeal. It should be cooked until it is tender, but not mushy.
- Serve the oatmeal with your favorite toppings. Fresh fruit, nuts, and seeds are all great options.
Conclusion:
Amish baked oatmeal is a delicious and hearty breakfast that is perfect for a cold winter morning. It is also a great way to use up leftover oats. With a few simple ingredients and a little bit of time, you can make a delicious and satisfying breakfast that the whole family will love.
