1 medium sweet onion, chopped

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain. In a large bowl, combine remaining ingredients; stir in bacon mixture. 1 medium onion, diced
1 medium green bell pepper, diced
1 teaspoon salt
½ teaspoon black pepper
1 (8 ounce) package uncooked egg noodles
1 (14.5 ounce) can petite diced tomatoes
1 (10.75 ounce) can condensed tomato soup, undiluted
1 cup cottage cheese
1 cup sour cream
2 teaspoons Worcestershire sauce
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine ground beef, onion, and bell pepper in a large skillet over medium heat. Cook and stir until vegetables are tender and beef is browned and cooked through, 10 to 15 minutes. Season mixture with salt and pepper while cooking.

1/2 cup finely chopped onion
Lawry's Seasoned Salt, season according to taste
black pepper, season according to taste
1 tablespoon dark brown sugar
1 (10 3/4 ounce) can condensed tomato soup
1 (10 1/2 ounce) can chicken or 1 (10 1/2 ounce) can mushroom soup
4 cups extra-wide noodles, uncooked (7 ounces)
8 ounces velveeta pasteurized cheese, cut into thin slices

Steps:

  • In a skillet, brown the ground beef and onion; drain off any excess grease.
  • Season with Lawry's Seasoned Salt and black pepper; according to taste.
  • Add the tomato soup and brown sugar to the cooked beef, and stir. (Do not add any additional liquid.).
  • Cook the noodles according to pkg. directions, and then drain them.
  • Add the cream of chicken soup to the hot-cooked noodles, and stir. (Do not add any additional liquid.).

2 cups chicken broth
1 cup milk

1 1/2 lbs ground chuck
1/2 onion, chopped
2 garlic cloves, minced
1/4 cup catsup
1/2 head green cabbage, coursely chopped
6 -8 yukon gold potatoes, diced
1/4 lb Velveeta cheese, sliced
1 1/2 cups whole milk
4 tablespoons butter, sliced into 8 pats
salt & pepper

Steps:

  • Brown ground chuck, onions and garlic in a skillet. Drain. Mix in catsup and set aside.
  • In a 2 quart baking dish, layer 1/2 of the cabbage, then 1/2 of the potatoes, and salt & pepper to taste.
  • Layer the Velveeta cheese slices on top.
  • Then spread on all of the meat mixture.
  • Add another layer of the cabbage, then another layer of potatoes and salt & pepper to taste. Arrange pats of butter evenly on top.
  • Pour milk over entire casserole and bake, COVERED, for 1 1/2 hours to 2 hours in a preheated 350 degree oven.

2 cups sour cream (a 16-ounce container)
2 cups small-curd cottage cheese (a 16-ounce container)
1/4 cup finely chopped onion
2 Tbsp. minced fresh parsley
1 7- to 8-ounce package medium egg noodles
1 Tbsp. vegetable oil
2 pounds lean ground round or well-trimmed chuck
1 6-ounce cans tomato paste
1 small jar pizza sauce, about 14 oz.
1 Tbsp. minced fresh basil, or 1 tsp. dried
1 Tbsp. minced fresh oregano, or 1 tsp. dried
1 tsp. salt
1/2 tsp. coarsely ground black pepper

Steps:

  • In a small mixing bowl, combine the sour cream, cottage cheese, onion, and parsley; set aside. In a large saucepan, cook the noodles according to the package directions. Drain and set aside. Heat the oil in a large saute pan, over medium heat, and add the ground beef, stirring now and then until the meat is no longer pink. Drain off all liquid and discard. Stir in the tomato paste, pizza sauce, basil, oregano, salt and pepper and simmer for 5 minutes. Preheat the oven to 325-f degrees. Grease a 9 x 13-inch pan and begin layering as follows: one-third of the meat sauce, one-half of the noodles, and one-half of the sour cream mixture. Repeat these layers, ending with the meat sauce. Bake covered for 1 hour or until the casserole is bubbly. If you would like, remove the cover the last 20 minutes of baking to crunch up the topping a bit. Allow to stand for 15 minutes, then serve.

3 can(s) whole kernal corn, drained
2 eggs
1 sleeve saltine crackers, crushed
1 Tbsp sugar
salt & pepper to taste
2 - 3 Tbsp butter, cut into slices
handful real bacon bits or bacon crumbled

Steps:

  • 1. Preheat oven to 375 degree F. In a 3 quart casserole; add the corn, saltines, sugar, salt & pepper. Mix eggs and add to casserole. Stir all well.
  • 2. Lay butter pats evenly over casserole and sprinkle with bacon. Bake 1 hour 15 - 30 minutes. If the corn starts drying too much on top, add some foil and finish baking.
  • 3. When serving, I mix the bacon into the corn. Enjoy!

2 clove garlic, minced
1/4 c (1/2 stick) butter
1/2 c all purpose flour

1 pkg (10 oz.) frozen peas (or may use peas & carrots)
4 c chicken, cooked and cubed
FOR THE DUMPLINGS:
2 c buttermilk biscuit mix
2/3 c milk

  • 1. In a large saucepan or large, deep skillet, saute onion, celery, and garlic in butter until tender.
  • 2. Add flour, sugar, salt, pepper, and broth; bring to a boil. Cook and stir for 1 minute; reduce heat. Add peas and cook for 5 minutes, stirring. Stir in the chicken.
  • 3. Pour the mixture into a greased or sprayed 9x13-inch baking dish.
  • 4. For the dumplings, combine biscuit mix and milk with fork until moistened. Drop by spoonfuls onto casserole, making 12 dumplings.

When cool, crumble into small pieces and set aside. While bacon is cooking, thoroughly brown sausage in a skillet. While sausage cools, sauté onions and other desired additions [ diced bell peppers, diced fresh mushrooms, etc.] in the skillet with the sausage drippings. set aside to drain and cool.
  • 2. In a large bowl, combine hash browns, salt, black pepper, garlic powder and hot sauce. Stir gently to thoroughly combine. Stir in cottage cheese and all but 1/4 to 1/2 cup of the cheddar and Swiss cheeses[ save for the top.] Stir in sausage and bacon, reserving 1/4 cup each for the top. Stir in sautéed onions, any other sautéed additions, and the 6 eggs.
  • 3. Grease one 9"X13" baking dish or two smaller ones if you want one casserole to eat now and one to freeze to eat later. Spread the hash brown mixture into the greased pans and spread reserved cheeses, bacon and sausage on top. If baking your casserole now, preheat oven to 350 degrees F. Bake for 35-40 minutes until all cheese is melted and bubbling and casserole has set up in the middle. Let casserole cool for a while and then cut into individual portions. Serve warm. Leftover portions may be frozen in covered freezer containers for quite a while and reheated in microwave. If baking later, tightly cover casserole with foil and refrigerate until 30 minutes before baking.
