1 (8 ounce) package egg noodles
½ cup butter
⅓ cup all-purpose flour
2 cups chicken broth
1 cup milk
2 teaspoons salt
½ teaspoon ground black pepper
2 cups chopped cooked chicken
1 (4 ounce) can sliced mushrooms, drained
⅓ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook egg noodles at a boil, stirring occasionally, until tender yet firm to the bite, 6 to 8 minutes. Drain and set aside.
  • While egg noodles are cooking, preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.

1/2 c onion, chopped
1/2 c celery, chopped
2 clove garlic, minced
1/4 c (1/2 stick) butter
1/2 c all purpose flour
2 tsp sugar
1 tsp salt
1/2 tsp pepper
4 c chicken broth
1 pkg (10 oz.) frozen peas (or may use peas & carrots)
4 c chicken, cooked and cubed
FOR THE DUMPLINGS:
2 c buttermilk biscuit mix
2/3 c milk

Steps:

  • 1. In a large saucepan or large, deep skillet, saute onion, celery, and garlic in butter until tender.
  • 2. Add flour, sugar, salt, pepper, and broth; bring to a boil. Cook and stir for 1 minute; reduce heat. Add peas and cook for 5 minutes, stirring. Stir in the chicken.
  • 3. Pour the mixture into a greased or sprayed 9x13-inch baking dish.
  • 4. For the dumplings, combine biscuit mix and milk with fork until moistened. Drop by spoonfuls onto casserole, making 12 dumplings.
  • 5. Bake, uncovered, in a preheated 350-degree oven for 30 minutes. Cover with foil and continue baking 10 minutes more.
