QUICK AMISH FRIENDSHIP BREAD OR MUFFINS (NO STARTER REQUIRED)

Quick Amish Friendship Bread or Muffins (No Starter Required) image

I love this bread and I had a craving for it, but didn't want to wait the month it took for the starter to be ready, so, I modified it a bit. It might not be quite as tasty as the original, but it's great if you want it in a hurry! I like to use butterscotch pudding for a different, but really nice flavor! Hope you enjoy!

OATMEAL BRAN MUFFINS (AMISH FRIENDSHIP BREAD STARTER)

Oatmeal Bran Muffins (Amish Friendship Bread Starter) image

These are great low fat, healthy muffins that use Amish Friendship Bread Starter (yes, the gift that keeps on giving. . .I swear this stuff multiplies). Feel free to add nuts, raisins, cranberries, cinnamon, vanilla, etc. I make my starter with whole wheat flour, so I go ahead and use cake flour in this recipe to lighten it up a bit. I also use carrot baby food in place of the applesauce to healthify it a bit more :)

AMISH FRIENDSHIP BREAD - NO STARTER

Amish Friendship Bread - No Starter image

We're big fans of Amish Friendship Bread and really liked this no starter version. This bread is made with pantry ingredients. It's got the texture of banana bread and it's filled with a nice cinnamon taste. Not overly sweet, it will be lovely with a cup of tea or coffee for an afternoon treat. It's an easy recipe kids can help...

Tips:

  • Use fresh, active dry yeast. Old or inactive yeast will not produce a good rise.
  • Proof the yeast in warm water with a pinch of sugar before adding it to the starter. This will help to ensure that the yeast is active and ready to use.
  • Stir the starter well after each feeding. This will help to distribute the yeast and nutrients evenly throughout the starter.
  • Store the starter in a warm place, between 70-80 degrees Fahrenheit. A warm environment will help the starter to grow and thrive.
  • Discard half of the starter before each feeding. This will help to prevent the starter from becoming too sour.
  • Use the starter when it is bubbly and active. This is typically 4-6 hours after feeding.
  • If you are not using the starter regularly, you can store it in the refrigerator for up to 2 weeks. When you are ready to use it again, simply take it out of the refrigerator and let it come to room temperature before feeding it.
