AMISH APPLE SEASON

Amish Apple Season image

Number Of Ingredients 12

APPLE PUDDING CAKE
Serves 14 to 16
This cake can be served immediately or after cooling, and it's good plain or with vanilla ice cream.
2 large eggs, beaten
1½ cups vegetable oil
3 cups flour
2 cups sugar
½ teaspoon salt
1 teaspoon baking soda
1½ teaspoon ground cinnamon
3 cups diced apples (see Note below)
½ cup raisins (optional)

Steps:

  • Preheat the oven to 350°F. Grease and flour a 9 by 13-inch pan and set aside.
  • Mix together the eggs, oil, flour, sugar, salt, baking soda, and cinnamon in a large bowl until well blended. Add the apples and the raisins. The batter will be dough-like, and it may be necessary to knead in the apples and raisins to fully incorporate them. Spread the batter evenly into the prepared pan. Bake for 1 hour, or until the top is golden brown and the edges are firm.
  • Note: Any variety of apple will work fine, but slightly tart apples will lend more flavor to the cake.

Time 1h15m

Number Of Ingredients 9

medium 3 or 4 apples (3 cups)
1/4 cup brown sugar
1 tsp vanilla
1 cup all purpose flour
1 egg
3/4 cup sugar
1 tsp baking powder
2 tsp margarine, or butter, cut up into small "pats"
Cinnamon

Steps:

  • Preheat oven to 350 degrees F. Use a regular ungreased bread pan for best topping results.
  • Peel and core the apples, then cut into eighths. Place into bread pan. Dump in the brown sugar and vanilla, toss with apples until well coated.
  • Mix the flour, egg, sugar and baking powder in a small bowl until the egg is the size of rice. Spread this mixture over the apples as evenly as possible. Place the pats of butter onto this topping, spacing them evenly so that the butter will reach as much of the topping as possible as it melts. Sprinkle as much cinnamon as you like on top.
  • Place into oven, bake 30 minutes or until golden brown and the apples are boiling.

Tips:

  • Use a variety of apples: This will give your crisp a more complex flavor and texture. Some good options include Granny Smith, Honeycrisp, and Braeburn.
  • Don't over-peel the apples: A little bit of peel adds flavor and color to the crisp.
  • Use fresh lemon juice: This will help to keep the apples from browning.
  • Don't over-mix the topping: You want it to be crumbly, not doughy.
  • Bake the crisp until the topping is golden brown and the apples are bubbling: This usually takes about 45 minutes.
  • Let the crisp cool for a few minutes before serving: This will help the topping to set.

Conclusion:

Apple crisp is a classic dessert that is easy to make and always a crowd-pleaser. With so many different variations, you can find a recipe that suits your taste. Whether you like it simple or loaded with extras, apple crisp is a delicious way to enjoy the flavors of fall.
