AMISH PEANUT BUTTER SPREAD

Different from the other recipes because it uses Mrs. Butterworth's Syrup instead of plain Karo. I found this recipe in a cookbook I bought from a Montana Amish (Yes we have Amish in Montana!) Kitchen/Diner called The Dinnerbell Bakery and Banquets Cook Book. Seriously sinful this spread usually doesn't make it to the bread or pancakes. And of course it makes a HUGE batch, after all it IS an Amish recipe. This is probably where they get the saying "Taste makes Waist".

AMISH PEANUT BUTTER JELLY

There are several recipes for 'peanut butter jelly' in Lancaster County - this is our favorite. Measurements are never exact - it's just mixed to the desired consistency. This is often spread on bread - on top of "shmear kase" (smear/cup cheese) - see my other recipes. Enjoy!

Tips:

1. Homemade is Best: Making Amish butter at home ensures freshness, quality, and control over ingredients. Fresh milk from local sources yields the best results. 2. Temperature Matters: Maintaining proper temperatures throughout the process is crucial. Cold cream and buttermilk promote better butter separation. 3. Use Heavy Cream: Opt for heavy cream with at least 36% butterfat content for a richer and creamier butter. 4. Cultured Butter: Culturing the cream overnight with a starter culture like buttermilk or yogurt adds a tangy flavor and enhances the butter's spreadability. 5. Churning Methods: You can churn the cream using a stand mixer, a food processor, or even a mason jar with a lid. Choose the method that suits your kitchen setup. 6. Wash and Rinse: Rinse the butter with cold water to remove any remaining buttermilk and improve its texture and flavor. 7. Seasoning Options: Experiment with different seasonings like salt, herbs, or spices to create flavored butters that complement various dishes. For a classic Amish touch, add a pinch of salt.

Conclusion:

Homemade Amish butter is a delightful addition to any meal, offering a rich, creamy texture and a fresh, flavorful taste. With careful attention to temperature, churning methods, and proper handling, you can create this delicious spread in your own kitchen. Embrace the Amish tradition of crafting wholesome and comforting foods, and enjoy the satisfaction of making your own homemade butter from scratch. Share your Amish butter with loved ones, spread it on warm bread, or use it in your favorite recipes to elevate everyday meals into culinary delights.
