POOR MAN'S PIE

This is an awesome recipe that I got from my coworker. It can be modified in many ways, including for the slow cooker. It's a simple meal of things you often already have on hand that really sticks to the bones, and it can also be a fun way to use up some leftovers.

GRANDMA'S POOR MAN'S PIE

Grandma's Poor Man's Pie image

This is an even simpler recipe that I grew up with (I've looked at the other recipes for Poor Man's Pie and Sugar Cream Pie - the other name for this type pie.) My grandmother's recipe was a 2-2/3-3 formula. It was called Poor Man's Pie because farmers always had the ingredients handy.

AMISH POOR MAN'S STEAK

First had this dish at an Amish church in rural Ohio. I will never forget the delicious smell of that church kitchen! After a little questioning, a kind woman gave me the recipe. Great for a plan-ahead meal.

Time 9h25m

Yield 5

Number Of Ingredients 7

1 pound ground beef
1 cup milk
1 cup crushed saltine crackers
1 onion, finely chopped
1 teaspoon salt
1 teaspoon ground black pepper
1 (14.5 ounce) can cream of mushroom soup

Steps:

  • Mix ground beef, milk, saltine cracker crumbs, onion, salt, and black pepper in a bowl. Shape mixture into a narrow loaf and place onto a baking sheet; cover and refrigerate 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cut loaf into 1-inch-thick slices and sear the 'steaks' in the hot skillet until browned, 2 to 3 minutes per side. Insides will still be pink. Arrange slices in a roasting pan. Spread mushroom soup over steaks.
  • Bake steaks in the preheated oven until mushroom soup is bubbling and meat is no longer pink inside, about 1 hour. An instant-read meat thermometer inserted into the center of a meat slice should read at least 160 degrees F (70 degrees C).

Tips:

  • To make the dough, you can use either a food processor or a stand mixer. If using a food processor, pulse the ingredients until they just come together. If using a stand mixer, mix on low speed until the dough is well combined.
  • The dough should be sticky, but not too wet. If it is too wet, add a little more flour. If it is too dry, add a little more water.
  • When rolling out the dough, be sure to use a lightly floured surface. This will prevent the dough from sticking.
  • To make the filling, you can use any type of fruit or vegetables that you like. Some popular options include apples, peaches, berries, and potatoes.
  • Be sure to season the filling to taste. You can add sugar, salt, pepper, or other spices, depending on your preference.
  • When assembling the pie, be sure to tuck the edges of the dough under so that the filling does not leak out.
  • Bake the pie at a high temperature for the first 15-20 minutes. This will help to create a crispy crust.
  • Once the pie is golden brown, remove it from the oven and let it cool for a few minutes before serving.

Conclusion:

Amish Poor Man's Bread Pie is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover bread and vegetables, and it is also a very affordable meal. With a few simple ingredients and a little bit of time, you can create a hearty and satisfying pie that the whole family will enjoy.
