AMY'S KICKASS CHICKEN MARINADE
I added a bit to Bergy's wonderful Ginger-Lime Marinade and came up with this; a staple in our house now. The ingredient variations are used depending on how much chicken I have; usually I use this marinade with boneless chicken breasts. I would recommend grilling with mesquite (real mesquite not briquettes). El Diablo or Best of the West are great if they are available where you are.

MARINATED CHICKEN
I set out to create the ultimate all-purpose marinade, and after spending many hours in the laboratory, I developed the perfect formula for balanced flavor. Fellow food lovers, I give you S.A.S.H.A. It stands for Salt, Acid, Savory, Heat, and Allium. All you need to do is combine ingredients that represent those flavor elements and you have yourself a fantastic marinade. I love using soy and/or fish sauce as my salty elements because they provide the perfect level of salt and savoriness and pack in the flavor. This marinade is perfect for all proteins: beef, poultry, pork and fish!

AMY'S GRILLED CHICKEN BREASTS
This recipe is delicious. I have not barbecued these but I have baked these in the oven. The flavors in this recipe are just wonderful and this is also a nice healthy and low fat recipe. The recipe is exported from Mastercook. This is a recipe that you definitely want to be sure and not overcook so the chicken stays moist and juicy. Preparation does not include marinating times.

Tips for Making the Best Chicken Marinade
- Use a variety of ingredients. The best chicken marinades combine a variety of flavors, so don't be afraid to experiment with different herbs, spices, and other ingredients.
- Let the chicken marinate for at least 30 minutes. The longer the chicken marinates, the more flavor it will absorb. If you're short on time, you can marinate the chicken for as little as 30 minutes, but for best results, marinate it for at least 2 hours or overnight.
- Use a covered container. When you're marinating chicken, it's important to use a covered container. This will help to keep the chicken moist and prevent it from drying out.
- Refrigerate the chicken while it's marinating. Chicken should always be marinated in the refrigerator. This will help to keep it safe from bacteria.
- Discard the marinade after use. Once the chicken has been marinated, discard the marinade. This will help to prevent the spread of bacteria.
Conclusion
Chicken marinades are a great way to add flavor and moisture to your chicken. By following these tips, you can make the best chicken marinade possible. So next time you're cooking chicken, don't forget to marinate it first! You won't be disappointed.
