NEW POTATO SALAD
Steps:
- Place the potatoes and 2 tablespoons of salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife. Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot and cover with a clean, dry kitchen towel. Allow the potatoes to steam for 15 to 20 minutes. Meanwhile, in a small bowl, whisk together the mayonnaise, buttermilk, Dijon mustard, whole-grain mustard, dill, 1 teaspoon of salt, and 1 teaspoon of pepper. Set aside. When the potatoes are cool enough to handle, cut them into quarters or halves, depending on their size. Place the cut potatoes in a large bowl. While the potatoes are still warm, pour enough dressing over them to moisten. (As the salad sits, you may need to add more dressing.) Add the celery and red onion, 2 teaspoons of salt and 1 teaspoon of pepper. Toss well, cover, and refrigerate for a few hours to allow the flavors to blend. Serve cold or at room temperature.

RED POTATO SALAD
"I REMEMBER digging small red potatoes from the soft warm soil, then gently pushing the plants back into the ground and reminding them to keep on making more potatoes. The new potatoes we brought home were either creamed with peas or made into this fresh salad."

Tips:
- Boil the potatoes until they are tender but still hold their shape. Overcooked potatoes will become mushy and fall apart in the salad.
- Use a variety of colorful potatoes, such as red potatoes, Yukon Gold potatoes, or fingerling potatoes. This will add visual appeal to the salad.
- Chop the potatoes into bite-sized pieces. This will make them easier to eat and will also help the dressing to evenly coat the potatoes.
- Use a light and tangy dressing. A mayonnaise-based dressing is a classic choice, but you can also use a vinaigrette or a yogurt-based dressing.
- Add some fresh herbs to the salad, such as dill, parsley, or chives. This will brighten up the flavor of the salad.
- Season the salad with salt and pepper to taste.
- Chill the salad for at least 30 minutes before serving. This will allow the flavors to meld together and will also make the salad more refreshing.
Conclusion:
Red potato salad is a classic summer dish that is perfect for potlucks, picnics, and barbecues. It is easy to make and can be tailored to your own taste preferences. With its creamy dressing, tender potatoes, and fresh herbs, red potato salad is a surefire crowd-pleaser.
