1 pound boneless skinless chicken breasts, cut into 1-inch pieces
2 tablespoons olive oil, divided
2 medium carrots, sliced diagonally
1-1/2 cups fresh broccoli florets
2 to 3 teaspoons minced garlic
1-1/3 cups chicken broth
1/2 cup grated Parmesan cheese
2 teaspoons dried basil
1/2 teaspoon salt
Additional grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute chicken in 1 tablespoon oil for 4-5 minutes or until no longer pink; drain. Remove and keep warm., In the same skillet over medium heat, cook carrots in remaining oil for 3 minutes, stirring occasionally. Add broccoli and garlic; cook 2 minutes longer. 2 boneless skinless chicken breast halves, cut into 1-inch cubes
1 green peppers or 1 red pepper, sliced (or combination of both)
1 small onion, sliced
1 (16 ounce) bag frozen mixed vegetables, , broccoli, cauliflower, and carrot (, broccoli, cauliflower, and carrot)
4 -5 cloves garlic, minced
12 ounces angel hair pasta
3/4 cup chicken broth
3/4 teaspoon dried basil
salt and pepper
1/4 cup grated parmesan cheese
parmesan cheese, for serving

Steps:

  • Heat 1 Tbsp.
  • oil in medium skillet over medium heat; add chicken.
  • Cook, stirring, until chicken is cooked through, about 5-7 minutes.

1/4 pound mushrooms
1 pound broccoli
2 tablespoons olive oil
3/4 cup low-fat cottage cheese
3/4 cup nonfat yogurt
1 1/2 cups canned Italian plum tomatoes
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
8 ounces fresh angel-hair pasta
Freshly ground black pepper to taste
1/4 cup freshly grated Parmigiano Reggiano

Steps:

  • Bring 3 quarts of water to boil in a covered pot.
  • Wash, trim and slice mushrooms.

Use any pasta (I always use a "plus" variety to get more protein) and feel free to switch up the veggies as your garden or farmers' market provides.
