Tips:

  • For the ultimate umami flavor, use a combination of dried and fresh mushrooms.
  • Don't overcrowd the pan when cooking the mushrooms. They will steam instead of sautéing and release too much liquid.
  • Cook the mushrooms until they are golden brown and slightly caramelized. This will bring out their natural sweetness.
  • Use a good quality balsamic vinegar. A cheap balsamic vinegar will be harsh and overpowering.
  • Add the balsamic vinegar towards the end of cooking so that it doesn't burn.
  • Serve the pasta immediately, garnished with fresh herbs and Parmesan cheese.

Conclusion:

This angel hair pasta with portabellas, leeks, and balsamic vinegar is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of mushrooms, leeks, and balsamic vinegar creates a rich and flavorful sauce that is sure to please everyone at the table. Serve it with a side of crusty bread to soak up all the delicious sauce.
